Happy Sunday! I’m so excited to be taking over @nuzest_usa instagram stories today {don’t forget to tune in!} and I thought it was the perfect time to share these layered freezer fudge bites I’ve been obsessing over. For all my seed cycling friends - they are perfect for the sunflower sesame part of your cycle ☺️

Layered Seed Cycling Freezer Fudge Bites {vegan, GF, DF, keto, paleo option, NO sugar added} serves 10 - 12
.
Vanilla layer
3/4 cup full fat canned coconut milk
3/4 cup @soomfoods tahini {code PRESS10}
2.5 scoops vanilla @nuzest_usa CLP {code PRESS15}
2.5 tbsp melted coconut oil
Cinnamon to taste

Chocolate layer
3/4 cup full fat canned coconut milk
1/2 cup organic @sunbutter
3 tbsp melted coconut oil
3 scoops chocolate @nuzest_usa CLP
Cinnamon to taste
.
Instructions: Mix vanilla layer in a bowl until evenly combined, scoop into lined muffin tins, spreading evenly with a spoon or a spatula. Freeze. Meanwhile mix the chocolate layer until evenly combined. Then smooth on top of the vanilla layer into the lined muffin tins and freeze again. Option to add some @Lily s_sweets_chocolate chocolate chips on top.

This was another great weekend and the fun isn't even over! We are headed to the "Winter Garden aGlow" at the botanical gardens this evening. I've never been and so it should be an exciting adventure, especially since the kids LOVE Christmas lights 🥰

MALABI 🌸 If your not familiar with this white beauty, it's a middle eastern dessert. It's made of cornflower, sweet whipped cream and rose water with peanuts and coconut on top 💖 My taste buds are celebrating only from writing about it 😅 It reminds me the Italian dessert - Panna cotta. .
🌸 I didn't really liked it up until last summer when I tasted a good malabi! Since then my husband and I are visiting this place almost every week 😅 .
🍩 VS 👆I never look on calories but for this post I checked and apparently Malabi is only about 200 kcal. So I do find it much much better compared to a dount or an ice-cream 😋 And it's not that heavy in you stomach, which is also important 😎

With life being busy it’s sometimes easy to push your goals aside and focus on everything else. Depending on your goals do you set aside time daily or weekly to tackle them? Everyone is tackling different goals, but in reality we all have the same end goal which is to achieve whatever we were working towards. So if there’s something holding you back from tackling your goals, look at what it is and figure out what’s preventing your from starting or finishing your goal. Sometimes our self doubt holds us back more than anything. So shoot for the stars, because you have nothing to loose. .

Let's face it, we don't always have the time to cook elaborate meals throughout the day but we still want to eat something healthy, delicious and well balanced. I used @successrice quinoa which made it super quick and easy without sacrificing quality and whipped up some crispy quinoa patties with a fresh salad and a fried egg. They are crispy and tasty and made with minimal ingredients.

To make the quinoa patties prepare one bag of @successrice quinoa as directed on the package. In a large bowl combine the cooked quinoa (approx. 2 cups) with 1/2 cup chopped scallions, a handful of roughly chopped parsley, 1 egg, 1/2 cup grated Parmesan cheese, 1/2 tsp. salt, 1/2 tsp. garlic powder, 1/4 tsp. cracked black pepper and 1/4 cup gluten free bread crumbs and mix well. Heat 5-6 tablespoons of oil of your choice in a large pan until hot but not smoking. I used avocado oil. With wet hands firmly press the quinoa mixture into balls enough to fill the palms of your hands. Gently press each ball into 3-inch patties. Place gently into heated oil at least two inches apart, in batches as necessary. Cook on each side for 3-4 minutes or until golden. Move to a paper towel lined plate. Makes about(8) 3-inch patties. Double up ingredients for larger batches. Serve with any of your favorite dipping options.
