Gluten-Free Banana Walnut Pancakes!
I followed @minimalistbaker 's recipie to a T, and they're THE BEST I've ever made so far. I'm taping this recipie on my cabinet door, it's that good! I only left out chocolate chips because I'm out of them but honestly I'd prefer them this way.
🔸1 medium ripe banana (brown and spotty preferred)
🔸1 1/2 Tbsp olive, avocado, or melted coconut oil (plus a little more for cooking)
1 1/2 Tbsp maple syrup (we recommend Grade A)
🔸2 tsp baking powder
🔸1/4 tsp sea salt
🔸1 - 1 1/4 cups non-dairy milk (we recommend plain unsweetened almond milk)
🔸3/4 cup gluten-free oat flour* (we recommend grinding from rolled gluten-free oats)
🔸3/4 cup gluten-free flour blend (we recommend our DIY blend for best results)
🔸1/4 cup almond flour (not almond meal // OR sub more gluten-free blend)

🔸To a mixing bowl, add banana and mash. Then add oil, maple syrup, baking powder, and salt and whisk to combine. Then add non-dairy milk (start with the lesser amount and work your way up as needed) and whisk to combine. If using coconut oil and it hardens or clumps, it's not a big deal. You can microwave (for 45 seconds - 1 minute) to remelt - otherwise, proceed.
🔸Add oat flour, gluten-free flour, and almond flour. Gently stir (being careful not to over-mix) to combine. It should be thick but pourable/scoopable. If too thin, add more gluten-free or almond flour. If too thick, thin with a little non-dairy milk. If adding fruit or chocolate chips, add now and gently fold to combine.
🔸Heat a large nonstick skillet, griddle, or cast-iron skillet over medium heat. Carefully rub skillet with a little oil. (You will likely need to decrease the heat of the skillet to medium-low / low once it's hot as to not burn the pancakes.)
🔸Once hot, spoon 1/4 - 1/3 cup of the batter onto skillet. Cook until surface of pancakes have some bubbles and the edges appear dry (~2-3 minutes). Carefully flip pancakes and cook until browned on the underside (~3 minutes more). The gluten-free flour blend benefits from a slightly longer cooking time, so don’t be shy to get a nice golden brown color on both sides.

Soooo this is not a dream, it’s real😅 The difference between the pics is only ONE week😱 and I’m down 4.3 pounds! Even with being sick, a couch potato for a day and missing two workouts, I’d say I’m pretty stoked😁 I’m extremely happy I came back to this program and put my trust in it. “We experience as much happiness as we believe we’re worthy of.” •

That hit me hard in my meditation practice this morning. How often do we rob ourselves of the joy of the moment simply because we don’t think we’re worthy to experience it? So many times I’ve robbed myself of the present joy simply because I didn’t get everything done that i needed to. It’s almost like a conditional joy—IF you get x, y, & z done THEN you can grant yourself the freedom to experience this happiness. That’s f’ing harsh and it’s painful to admit but I caught myself doing the same thing yesterday and this morning. I feel like I’ve made big strides in my self love and acceptance journey but waking up this morning I retreated back to a thinking that I deem as “safe.” I wish i didn’t find comfort in this ugly way of thinking, but i do. It’s not an easy thing to break free from, but conveying my struggles & feelings to you my sweet peeps, is a starting place. Yes I have a lot to get done but I’m only human—I’ll get done what I get done. Instead of focusing on everything you didn’t do, focus on everything that you DID. It’s a hard practice and I’m preaching to myself right now but know that you are worthy of happiness just as you are—JUST as you are. #runningcarroteats
