-15 oz can of chickpeas, drained/ rinsed/cooked on the stove until crisp
-1/4 cup red onion, finely chopped
-3 tbsp cilantro, finely chopped
-1 medium cucumber, finely chopped
-1 fresh lemon, juiced
-1 tbsp organic olive oil
-Salt,pepper, garlic, to taste
-Mix all together and enjoy!
