Recently I’ve decided to try to eat less carbs. The biggest part of my carb consumption was from the fruits I add to my lovely yogurt bowls.
I’ll keep eating fruits as part of my daily diet but I’ll go for berries which are very nutritious and low in calories.
Probably adding less of these super delicious home made granola will be needed to decrease my carb intake. Consuming in moderation struggle is real. 😀

These fall days make me want to bake something. I hardly ever bake. I'm single, with friends and family all around the world but not living close to me. So no point in making a whole pie.

Still, I love a picture like this. I'm not quite sure what it is. It looks like a pie that is being made of cinnamon buns. Does anyone know?

Maybe I should bake one for the group of workers that are renewing the sewer system in our neighbourhood. I'm sure they'd appreciate it.

Ingredients:
- 1 scoop @whitewolfnutrition smooth chocolate protein
- 3/4 cup almond meal
- 2 tbs cacao
- 2 tbs coconut flour
- 1/2 tsp baking powder
- 1 small banana, mashed
- 1/2 banana thinly sliced.
- 2 tbs cacao nibs
- 2 eggs
- 3 tbs vanilla @yoproau (or simply use natural greek yogurt)
- 1/2 cup milk of your choice

Method:
1. Preheat oven to 160 degrees fan forced.
2. Combine almond meal, cacao, coconut flour, protein and baking powder in a mixing bowl.
3. In a separate bowl whisk eggs, banana, yogurt and milk together. Add into dry mixture and stir until well combined.
4. Pour evenly into lightly greased muffin tray. Top each muffin with a slice of banana and a sprinkle of cacao nibs.
5. Bake in oven for 25-30 minutes.

My very first non-dairy, wheat-free, eggless, buckwheat pancakes! Not too bad actually. The texture is somewhat gritty but I mixed rice flour in too to make them softer. They are much more filling than regular pancakes because buckwheat has a decent amount of fiber according to my research. Day FOUR of #SugarAwarenessWeek I used @natvianaturalsweetener to make these CHOCOLATE ORANGE TRUFFLES 🍫🍊. They turned out amazing and were a a huge hit when I took them into work. Recipe below ⬇️

Ingredients:
For the muffins ▪️75g almond flour ▪️2 large eggs ▪️1 tbsp orange juice ▪️Zest of a medium orange ▪️20g orange spice choc shot ▪️10g cacao powder ▪️1/2 tsp baking powder
▪️1/2 tsp baking soda
For the Buttercream ▪️25g dairy free butter ▪️25g natvia sweetener
For the chocolate coating:
▪️50g 70% dark chocolate -
Method: In a large bowl combine the eggs, almond flour, orange juice, orange spice choc shot and cacao powder. Stir until well combined. Next zest the orange and add to mixture. Lastly add the baking soda and powder. Mix to combine. Divide mixture into a six hole muffin tray. I used a silicone muffin tray. Bake in oven at 180c for 18-20 minutes. Once baked take out oven and leave to cool.
While muffins cool make the buttercream by blitzing 25g natvia sweetener In a high speed blender until a fine powder. Beat butter and powdered sweetener together to a smooth thick buttercream. Next break the muffins up into small pieces and mix into the buttercream. Roll mixture into balls. I used a cookie scoop to measure them out. Place in the fridge for 10-15 minutes to firm up. Meanwhile melt the dark chocolate. Take truffles out the fridge and dip in melted chocolate to completely coat them. Place each finished truffle on grease proof and place back in the fridge to harden the chocolate. Then eat and enjoy! -

Who wants a healthy pumpkin pie recipe? It’s so healthy you can eat it for breakfast!!!! 🎃

Serves: 8-10 people
Crust:
2 cups of gluten free oats
1/2 cup shredded/desiccated coconut (preservative free)
2 tbsp coconut sugar
2 eggs
2 tbsp melted grass-fed butter
1 tsp cinnamon
Pumpkin Filling:
2 cups pumpkin
2 tbsp coconut oil
2 tbsp maple syrup
3 eggs
Pinch of pink salt
1/2 tsp dried ginger
1 tsp cinnamon
1 cup of organic coconut cream
1 tsp vanilla bean powder
Method:
1. Preheat the oven to 180.
2. Roughly chop the pumpkin into chunks, drizzle with 2 tbsp coconut oil and roast in the oven for about an hour, or until completely cooked through and soft. Set aside.
3. To make the crust, place the gluten-free oats in a food processor and mix until they form a fine meal.
4. Add the shredded coconut, coconut sugar, eggs, melted butter and cinnamon to the food processor and blitz until the ingredients are all well mixed and have formed a batter. Remove the mixture from the food processor and leave it to rest in the fridge for 15 minutes.
5. Grease a tart tin and then press the crust mixture into a 20cm tart shell. Place in the oven and cook for 15 minutes until golden. Set aside.
6. While the crust is cooking, blend the pumpkin with the maple syrup, eggs, pink salt, dried ginger, cinnamon, coconut cream and vanilla bean powder until well mixed and smooth.
7. Remove the crust from the oven and pour the filling evenly into the crust shell.
8. Place the pumpkin pie into the oven and bake for 25 minutes (or until the pumpkin mix is firm to touch).
9. Remove from the oven and allow to cool completely before serving. Can be enjoyed warm or cold.

80 gr biologische havermout @albertheijn
1 grote banaan (130 gram)
25 gr pindakaas - amandel | speculaas @misterkitchens
1 tl koek & speculaaskruiden
Optioneel: (snuf zoetstof)

Prak de #banaan fijn met een vork. Voeg daar de koek & speculaaskruiden aan toe. Voeg de havermout toe en maak hier één mengsel van. Doe de pindakaas erbij en roer met een vork goed door elkaar.

Verdeel dit in zes gelijke bolletjes, duw dit op een bakplaat tot koekjes en bak op een bakpapiertje en eeb rooster voor ca 25-30 minuutjes af op 175 graden 👌
