Ingredients:
Purple - 40g roast red onion, 30g chickpeas, 2 tbsp. extra virgin olive oil, garlic powder, black pepper
Pink - 40g beetroot, 30g chickpeas, 2 tbsp. extra virgin olive oil, 2 tsp. lemon juice, black pepper
Red - 50g roast cherry tomatoes, 30g chickpeas, 2 tbsp. extra virgin olive oil, 1 tbsp. dried basil, garlic powder, black pepper
Orange - 40g roast sweet potatoes, 30g chickpeas, 2 tbsp. extra virgin olive oil, 1 tbsp. dried thyme, black pepper
Yellow - 50g roast yellow pepper, 30g chickpeas, 2 tbsp. extra virgin olive oil, garlic powder, black pepper
Green - 50g roast green pepper, 30g chickpeas, 2 tbsp. extra virgin olive oil, garlic powder, black pepper

Whit Chocolate Pumpkin Dough Balls by @eat.drink.shrink πŸ’›

Recipe
Ingredients

1 1/2 cups almond flour
1/2 tsp baking soda
1 1/2 tsp pumpkin spice
1 1/2 tsp cinnamon
3/4 can pumpkin puree
1/2 cup maple syrup
2 tsp vanilla extract
1 banana smashed
1/3 cup almond milk
1 1/2 cups vegan white chocolate chips (divided)
1/3 cup coconut oil
Instructions

Combine dry ingredients. Combine wet ingredients. Fold in 1/2 cup vegan white chocoalte chips. Form balls, place in fridge to set for 15 minutes. Melt coconut oil in microwave, pour over chips. Pop in the microwave at 10 second intervals until fully melted. Pour over the chilled cookie dough balls or dip. Top with a pinch of cinnamon. Place back in fridge to set. Enjoy! #veganfoodvideos

Even when I'm sick I still crave meals like this. Sweet potato always hits the spot no matter the situation 😌 I had one of those with chickpeas, raw sugar snap peas, tomatoes, cucumber, and mashed avocado. This is probably my favorite meal at the moment!
I've spent today resting. My body just does not want to do anything! It's so tired and worn down, so I'm trying to listen to it. If I'm being honest, resting is so hard for me, but I know it's what's best in order to recover fully! So I'm drinking some tea and taking a break from stressful activities for the day 😊

I've been focusing on my nutrition/workouts lately and finding what makes me feel my best while still pushing me. I'm careful to not push myself to the edge, and I defnitleh out life before fitness. That works for me.

Fitness is like a science experiment. There's always new information, new trials, new results, and alterations to make. I love finding out more and more about my body and how it responds.
