Crispy Purple Sweet Potato Wedges with Guacamole by @crumbs.and.caramel ๐Ÿฅ‘

Crispy Purple Sweet Potato Wedges

3-4 medium purple sweet potatoes
2-3 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp ground black pepper

Preheat the oven to 425 degrees F. Line a large baking sheet with parchment paper. Scrub the sweet potatoes. No need to peel them as the skin helps with the crispy exterior. Cut each potato into wedges by cutting it into quarters, and then each quarter into thirds resulting in 12 wedges per potato. Place on baking tray and drizzle with olive oil. Dust with salt, pepper and garlic powder. Using your hands or a large wooden spoon, toss to coat evenly and then line the wedges on the pan in such a way that each one is lying flat. If they are piled together, they won't be crispy. Place in the oven for 10 minutes. Remove from oven and flip the wedges. Return to the oven for another 10-14 minutes. The inside of each wedge should be fully cooked and tender.
Guacamole

3 large avocados
1/2 medium shallot, finely chopped
Juice of 1/2 lime
1/2 tsp salt
Other add-ins if desired - chopped cilantro, diced tomatoes, garlic
Wash, peel and pit the avocados. Place in a medium sized bowl. Mash with a fork. Add the chopped shallot, lime juice and salt (and add-ins if desired). Mix together. Add more salt and/or lime juice to taste.ย  Enjoy!

Happy Friday!!! I slept in all morning! I was sooo exhausted! ๐Ÿ˜† Did anyone else stay up late last night for the Star Wars premier????

#holyfit these are amazingly addicting! #glutenfree #homemade #vegan #granolabars they are super easy to make and no refined sugars so no guilt! This makes a recipe for 16 in a 9x13 inch pan in a medium bowl add 2 cups gluten free rolled oats, 1/4 cup 85% chocolate chips, 1/4 cup shredded coconut unsweetened, 1/3 cup roughly chopped pecans and walnut mix, 1/4 cup chia seeds, you can add quinoa too 1/3 cup of gluten free all purpose flour, 1 tbsp cinnamon, 1 tsp instant coffee, a pinch of salt. In a second bowl Mash 2 bananas, 1/4 cup of date syrup, 1/4 cup of tehina, stir well until smooth mixture and start pouring into the dry mixture until it becomes a sticky cookie dough like texture. Mix well so all ingredients are incorporated throughout. Place parchment paper and grease with a bit of coconut oil into the pan and place mixture down and pat flat making it about 1/2 inch thick. Bake on 350 for 25-30 minutes, checking it at 25 to make sure itโ€™s hardening but not burning. Let cool for 10 min and then start slicing into granola bar cuts. Do not take out of pan until fully cooled. You can go over the cuts before you take them out. In the meantime add two tbsp of chocolate chips into 1 tsp of coconut oil and melt. Put into a squirt bottle or use a spoon to drizzle chocolate on the bars. Place in fridge to or freezer to keep. I like making a lot ahead of time so thereโ€™s always something quick to grab. Enjoy!

I've come a long way in one year and I'm still not anywhere near where I want to be, however I always remember everyday is a new day, a new chance to try harder and an opportunity to learn something new about myself! "PROGRESS" no matter how small is still progress. This is a lifestyle not a trend that I want in my life. Im not getting any younger and I want to be the best me I can be. ๐ŸŒž
I want change and I am determined to not let anything get in my way and neither should you! Start by making small changes, cut out sugar slowly during the week start drinking more water than regular. Set small goals and before you know it, these will have turned into big goals achieved.
I swear it's about what you put in your body more than anything. In the very beginning when I was 247 lb. I started small watched my intake cut out sugar completely even natural sugars. I stepped away from all the bread. I would drink 64oz of water or crystal light a day. I walked fast for 20 min a day. Immediately I seen results!
I am here for anyone who needs motivation :)

Chocolate pancakes by @lvlegan ๐Ÿ’—

1 cup rolled oats
1 ripe banana
1.5 cups plant milk
2 Tbsp maple syrup
2 Tbsp cocoa/cacao powder
1 Tsp baking powder

Directions:
1. Blend the oats into a flour consistency
2. Add the rest of the ingredients into the blender and blend until smooth
3. Cook on a medium heat until bubbles appear on the surface of the pancakes
4. Serve with soy yoghurt, blueberries and cherries.

My first day back to running and watching what I eat.
I am walking for 1 min and running for 1 minute, for a total of about 25 minutes. .
