Healthy pickled sandwich. Okay the bread and the PnP chip sauce are not healthy. Let's hope the rest of the goodness make up for it: Spinach, gherkin, pickled onions, mushroom, pickled ginger, thyme, parsley, pepper, salt and a side of olives.
It's been a while since I've posted food pics, mostly because my food has been very boring and uninspiring. I've slowly but surely been getting back into a healthy lifestyle again and I'm starting to feel inspired again. Thanks to all my instafriends for consistently posting your healthy food because it has definitely played a huge role in my food choices and in turn, my health. Being vegan is not only about the animals, I can feel the benefits (almost instantly) of this healthier lifestyle.
I do try to avoid food with labels, especially those that have more than 2 or 3 ingredients in them and those that that of course have preservatives and other additives. So bread and sauces are minimal in my diet, but they do help for those moments when we experience food depression and are looking for something a little "more". And having a little of it every now and then is still far better than a western diet filled with animal fat.
Much like our Christian walk, if we don't continually take up our cross, we will fall back. Keep reminding yourself daily that the healthier lifestyle is good for your body, the animals and our planet. Remember why you do this and take up your cross daily. You will feel refreshed renewed and inspired.
