👋 It’s been really quiet over here as I have been dealing with a difficult downhill in my very non-linear healing journey 😞. And it’s not fun but health comes first, so I am taking it easy and not posting regularly. But these babies were real healthy comfort food for my weary heart. Recipe share from my stories this morning // my grain-free sweet potato pancakes 🥞. Easy and delicious. Here are the deets: 💛 1 sweet potato (skin removed and mashed. previously roasted whole in the oven)
💛 2 organic pastured eggs beaten 💛 1/2 cup cassava flour (I use @ottos_cassava_flour ) 💛 1/3 cup unsweetened almond milk (@califiafarms)
💛 1 tsp gluten-free baking powder 💛 1 tsp pumpkin pie spice
💛 pinch of salt (@redmondrealsalt)
💛 optional 1 tsp date syrup (@thedatelady)
💛 ghee for cooking pancakes
Mix everything together in a bowl. Heat a non-stick fry pan to medium heat. Use 1 tsp ghee per lot of pancakes. Scoop 2 tablespoons of batter per pancake. Fry for a few mixtures in each side.
As far as toppings you can go to town. But mine are topped with ground flaxseeds, chia seeds, unsweetened flaked coconut, more of @thedatelady syrup, raw pumpkin seeds and a dollop of @newearthsuperfoods coconut probiotic yogurt. Enjoy! ♥️

Try out this quick & easy recipe to whip up before dinner!
-½ tsp coconut oil
- 2 links of chicken sausages of your choice
- 1 red bell pepper
-1 ½ cups green beans (mines were freezer friendly from Green Giant) - 3 cups organic baby arugula, washed & drained
- 1 tsp dried oregano
- ½ tsp of: dried thyme, dried basil, garlic & onion powder - ¼ tsp of salt & black pepper - ½ tsp of balsamic vinegar - Optional: 1 tsp pine nuts + more for garnish

Melt oil over medium heat in a cast iron skillet; in the meantime, cut up sausage.

Add sausage to skillet & fry for about 2 minutes on each side; in the meantime, cut bell pepper into strips.
When the sausage is done, add bell pepper & green beans. Mix together & cook for about 2-3 minutes.
Add arugula & mix until wilted. Add herbs, garlic & onion powder, salt & black pepper & mix.
Add balsamic vinegar & pine nuts. Mix all together!
Transfer to a bowl & garnish with pine nuts. ENJOY!
