So this is an indian dessert . Its called "rasmalai" . I made a keto version of this dessert. Guys!!! U should try it. Its super creamy, tasty and yummmmyyy! This dessert calls for pistachios for garnishing but i used sunflower seeds instead ,just to make it keto friendly.
Recipe: makes 4 rasmalais
Half cup ricotta cheese
1/2 tbsp green cardamon powder
1 packet stevia
1tbsp almond milk
3 saffron strands
Instructions: Mix ricotta cheese with half packet of stevia and some green cardamon and bake it for 20 min at 325. Please make sure not to burn it.
In a separate bowl, mix HWC , almond milk and soak saffron for few mins. You will start too see saffron dissolving in the HWC mixture and now add the remaining stevia and green cardamon powder and let it sit in the fridge .
When ricotta bake is done. Let is cool completely and cut in the shape you like. It tends to fall apart so be careful. Finally,soak all the pieces of ricotta bake in HWC mixture and let it set for at least 4 hrs or overnight.
