I’m looking back on some of the choices I made in my career. I haves worked for some good chefs and a lot of bad ones. And I’ve managed a lot of bad people and a few good ones. The fight for me is doing the right thing in the work place. I’m not into work politics I just want to do the right thing and help those I supervise to do the right thing. I fought hard to just become a chef only to learn that the fight did not stop there. I had to fight to go to school when people said black cooks don’t go to culinary school and I heard that from both black and white people. I had to fight when people insist on doing bad things. The thing is That I wanted this life. I did not plan on becoming a chef when I started cooking but the responsibility that I was taking I had to step up and become a chef. As far as the fighting, I think it will never stop. In truth I have lost more fights than I won. If I had a chance to do it over, the only thing that I would change is to fight harder.
