As in previous year, we decided to divide our on normal and late. Late harvest grapes are used to make a wine that contains both higher residual sugar and higher potential alcohol than standard table wines.
The other day, I posted a video about a Grenache fermentation that was nearing its end but showing that it still had quite a bit of residual sugar left. I mentioned that it was possible to spin the sample down and clarify it, that's getting a better understanding of what the residual sugar level actually is.
