The biggest difference between organic and conventional biological wheat is not chemicals but fertilizers. Grains are extremely hungry for nitrogen and in organic farming the application of N from petrochems (urea or ammonium sulphates etc) is not allowed. We apply nitrogen to the soil by growing mixed cover crops in seasons leading up to the wheat season. These mixes include legumes and are mob grazed by healthy rumen (I mean grass-eating animals like bonsmara cattle). Manure can't supply the N need of grains on it's own as the phosphate and potassium levels climb too high and pulls out of balance with other elements. Legumes need phosphates and potassium in luxury levels but in turn fixes nitrogen in the soil (teaming up with rhizobium bacteria in root nodules to take N from the air), therefore balancing the macro nutrients left behind from decomposing trampled cover crops and the manure and urine, to favor grains' palate. To make sure that this balance is right we undersow / intercrop the wheat with clovers like this one here. The clovers will be grazed with the wheat stubble after harvest. This is a very long process and it demands patience from both farmer and consumer, but the rewards are enormous - taste, nutrition, shelf life, soil health, diversity, habitat, farm ecosystem health, photo opportunities etc.
