Also smoked up this tri tip today (you can kinda spot the smoke ring!). This was a grocery store Select grade cut. Rubbed with #hardcorecarnivore Black, cooked for 1.5 hrs until 135f internal, then double wrapped in foil and rested in a cooler for a full hour. Cut against the grain, it was fantastically tender and tasty. I appreciate marbled meat as much as anyone, but Prime accounts for less than 3% of total harvested carcasses in the US. Finding ways to make other grades work for you is a great way to save $ AND (in my opinion) is an important part of sustainability.
