Kayathoran(Vegan Plantain stirfry)
Recipe that is #saatvik #noonionnogarlic And #veganfriendly #under15minutes - 1 raw plantain
- 2tbsps coconut oil
- 1/2tsp mustard seeds
- 1 dry red chilli - 2 curry leaves - 1tsp grated ginger
- 1tsp each(urad daal,bengal gram)
- 2tbsps grated coconut
Pressure cook plantain with water barely touching the top of plantain for 1wstle with a pinch of turmeric and salt. After cooling peel then skin and grate.
In a kadai heat Oil, add mustard,curry leaves,red chilli,urad daal,bengal gram sauté couple of minutes and add grated plantain,stir well. Check salt and add if needed. Turn of stove, Stir in coconut and mix well. Serve with rice 😊

Vegan Mung sprouts potato sabji. #noonionnogarlic #saatvik sabji with very mild spices. This was our dinner with #roti
This is how I made this:
1.5 cups sprouted Mungbean
2 small potato(peeled and diced)
Pressure cook both with little salt for 2 whistle, strain and keep aside.
In a pan add 1tbsp sesame oil, 1tsp grated ginger and 1/2tsp cumin seeds. Add in 1tsp coriander pwdr,1/2tsp chilli pwdr, 1/4tsp(turmeric,aamchur,garammssala) and sauté. Mix in the veggies stir well until combined and sprinkle some coriander leaves. Quick #recipe #under15minutes .

Vegan raw Coconut/nuts/dates bites. I am a big fan of sweets that is something that I can never give up 😁 now I am trying to find alternatives for my #sweettooth #cravings that’s how I took some of my favorite ingredients and made this for the weekend. These are #crunchy #nutty and not too sweet
10 organic #dates
1/2 cup #oats
1/2 cup #almondmeal
1/4 cup #pistachio
3 dry #figs
1/4 cup #coconutflakes
Add everything to a #foodprocessor and pulse until ground. Roll the dough to log and chill for couple of hours and slice to needed thickness before serving. Not sure of shelf like BECAUSE IT AIN’T staying that longer, only 4 more pieces left 😂.

This is a simple stuffing made with #tofu #mushrooms #cabbage - sounds interesting then👇🏻is how it’s made :
Super firm tofu - 1 cup(finely diced)
Cabbage - 1 cup(Finley chopped)
Mushrooms - 1 cup(finely chopped)
Sesame oil - 3tbsp
Red chilli flakes - 1tsp
Taco seasoning - 2tbsp(I used homemade)
Salt as needed
On medium high heat sauté tofu with 1tbsp oil in a sauté pan for 5 min or until it slightly turns golden, remove to a bowl. Next with remaining oil sauté veggies on medium high heat for 5-6 min or until water evaporates, remove to bowl. Once everything cools add required salt with taco seasoning, chilli flakes, stir well. Fill up your dumplings and seal them. You can cook this by steaming or making potstickers or boiling whichever way you like and enjoy 😊

My #half_raw_half_cooked lunch today was 🌱vegan green peas tomato curry
🌱vegan multigrain roti
🌱1 papaya 😬
That papaya was perfectly riped you can see that from the color-it was sweet like nectar. Also the color of the #tomato #peas #curry is not from spices it’s purely #farmfresh tomatoes from #goodfarmcsa that I froze when it was in abundance this summer. This #noonionnogarlic curry was made with 8 simple ingredients,recipe below:
2tsps oil
1tsp cumin seeds
5 fresh #curryleaves
2 paste tomato purée
1/2 cup peas
1 tsp chilli powder
1/2 tsp turmeric powder
Salt as needed
In a sauté pan add oil, once hot add cumin seeds and curry leaves. Lower the flame and add the tomato purée, cover immediately. Cook for 4 minutes or until water dries a little, add the spices with salt. Stir in peas and cook for 5 minutes covered-it’s perfect for steamed rice or roti 😊
My husband/daughter is not a fan of peas, who cares because I love it 😂

Barnyard Millet idli is what we made for breakfast today morning. Making for the first time I tried making very little batter. I could not find the difference than regular batter. Dosa turned out super crispy too. This is a wholesome healthy batter with no rice but only millets 😊

Gothumai / Wheat idli for our dinner. Am trying to change my weekly batter by adding some variations.Thanks to my MIL for the recipe. Super light and fluffy idli made with 75% #brokenwheat so this is completely #diabeticfriendly

If you wanna give this recipe a try then
Soak for 4hrs the following in separate bowls:
Broken wheat 1.5cps(soak with water just 1/2 inch above the wheat)
White poha 1/4c(with water level 1/2 inch above poha)
Urad daal 1/2c+1tsp fenugreek seeds(soak with water level an inch above daal)
Grind urad daal first to fluffy consistency by sprinkling less water,remove to a bowl. Now grind white poha finely then add soaked wheat. Grind everything adding water little by little, add needed salt. Remove this batter and mix with urad daal and let it ferment for 8-12hrs now batter is ready to make soft #idli or #dosa 😊.
