My first (after a long time) 16 hour fast is behind the back and i feel good. Im happy i jumped right back into it. I know the idea of fasting seems overwhelming to some, as many ask similar questions. I think u shud try it for yourself a few times and make up your own mind about it. Believe me, u are NOT going to die of starvation lol.
Broke my fast with a slice of tahini almond loaf -topped with egg salad (homemade mayo and ranch dressing combo) - tomato slices - cucumber slices -more egg salad and sabja seeds.

1kg cake flour
2 sachets instant dry yeast
120g sugar
10ml salt
12.5ml aniseed
100g butter
200ml white grape juice
200ml lukewarm milk
200ml lukewarm water
Mix the flour, yeast, sugar, salt and aniseed together. Place the butter and white grape juice in a saucepan and heat until butter melts.
Allow to cool till body temperature. Do not add the milk to the grape juice as it will curdle.
Add the lukewarm water, melted butter and grape juice to the dry ingredients and mix well.
Add the lukewarm milk and knead well till the dough is smooth and elastic.
Place dough in a greased bowl and cover with a cling film and allow to rest for about 25 min.
Knead down and divide into 40 equal pieces. Roll each piece into a ball and place against one another in greased loaf pans.
Cover and leave to prove until double it’s size, about 50 min.
Brush with egg and bake in a preheated heated oven of 180 for 35-40 min.
Syrup
1 cup sugar
1 cup water
Dissolve the sugar in water and cook over medium heat until slightly thickened.
Brush over mosbolletjies as soon as you remove from oven.

Strawberry Trifle🍓

1 packet tennis biscuits
Slices of vanilla/chocolate sponge cake
1/2 box Ultramel custard
250ml fresh cream
1/2 tin strawberry flavored Caramel treat
1 punnet strawberrys
3 tbsp icing sugar
Milk/dark chocolate
Wash and slice strawberries and mix with icing sugar, set aside.Crush tennis biscuits coarsely. Beat together fresh cream and caramel till thick. Layer crushed biscuit, caramel cream, slices of cake and custard. End with caramel cream and decorate with chocolate curls and strawberries. Refridgerate for a few hours before serving.

Strawberry whirls

Basic Butter Dough :
Ingredients
250g butter butter softened
1 cup icing sugar
½ cup oil
¾ cup maziena
2 tsp vanilla essence
2-3 cups flour

Strawberry cream :
100g butter / margarine
1 cup icing sugar
1 tsp strawberry essence

½ cup strawberry jam
Castor sugar to sprinkle
Icing sugar to dust

Method :
Cream butter and sugar and vanilla until white and creamy.
Add oil and beat for 5 mins on medium speed.
Add maziena beat for 2 minutes.
Lastly add in the flour 1 cup at a time to form a soft but firm dough.
Divide dough into 2.
Roll one half between wax paper, cut into rounds using a small round cutter.
Roll second half between wax paper. Cut dough using a mini donut cutter alternatively With the same cutter as the first half of dough cut rounds take a small nozzle and cut into the center of each to make a ring.
Place on a baking tray and bake on 170 deg for 10 minutes. Remove from oven and cool on a cooling rack.

Strawberry cream :
Beat butter, sugar and essence smooth and creamy.

When biscuits are cooled, join with the strawberry filling.

Warm the jam in the microwave for 20 seconds. Add spoonful in the centre of each biscuit sprinkle castor sugar over jam and dust with icing sugar.

Lemon & Granadilla Cooler

1 orange (squeezed)
1 lemon
Sugar according to taste
2 tins Granadilla pulp
Handful of fresh mint leaves
2 Cups of Ice
1 or 2 litres of water
Sprite
Liquidise the lemon ,ice water , sugar ,orange juice and mint (Just a quick whizz. Lemon will be chunky). Don't Liquidise extra or the juice will become bitter.
Strain out.
Put the Granadilla at the bottom of the jug
Pour the juice over and top it up with sprite
mix everthing together top with some fresh mint
Serve cold.
Enjoy!

American chop suey
Boil some spaghetti just till soft. Remove from water n lay in tray n sprinkle generous amount of corn flour. Let it dry outside by covering with a net. Then deep fry till golden n keep aside.
Half tray chicken fillet cut in to strips. In a pan drizzle some oil n add the chicken strips salt to taste pinch black pepper n quarter tsp garlic. Once dry then add a handful of carrots n green beans julienned n half a tsp of zeal salt. Add a handful of whole corn. Let that dry n keep aside.
Sauce
In a pot
4 tbs sugar
4 tbs oil
4 tbs tomato sauce
4 tbs vinegar
1 tbs soya sauce
1 tsp salt
Pinch orange food colour
1 tbs corn flour
1 cup water
Bring to boil just before serving.
Before serving warm everything n in the plate crush the spaghetti just abit n add the chicken mix n then pour sauce over n serve.

250gr butter
1 cup sugar
1cup chopped almonds
2tbl water
Put everything into a heavy base pot over medium heat. Heat until better melts
N sugar is dissolved
It'll start to bubble continue stirring until changes color to a medium Caramel
Remove from heat
Quickly spread  over a greased surface
Allow to harden
Break into pieces drizzle chocolate over
(I spread meltd choc over n sprinkle sesame seeds n then let it set n then break into pieces)

Chocolate cake

5 eggs - separated
Beat whites stiff with a pinch of salt. Set aside.
Beat yolks with 1 1/2 cups sugar.
Add 3/4 cup boiling water
3/4 cup oil.
Beat
Add 1 tsp vanilla essence
Sift 3x : 1 1/2 cups flour
1/4 cup cocoa pd
4 tsp baking powder
Add and beat

Now fold in the egg whites
Bake on 180 degrees till done or until a skewer comes out clean.

1tsp elachi powder
1 tsp rose water (woolies) Glaze:
1 cup icing
1 tsp rose water
Lil water. Method as normal for shortbread. I baked half the recipe at a time in. 23 cm tart tin.

Almond and coconut crescents

Ingredients:

250g butter (softened)
3/4 cup castor sugar
1 cup maizena
1 cup almonds (chopped)
1/2 cup desicated coconut
Flour (to form dough)
1 teaspoon almond essence
1 teaspoon vanilla essence
Castor sugar (for coating)

Method :

Roast almonds before hand in oven on 120 degrees for 6 - 8 minutes and leave to cool. Beat together butter and sugar till thick creamy, add in maizena and beat for a further 5 minutes. Add in almond essence and vanilla essence and beat. Now add in cooled almonds and desicated coconut. First add in 1 1/2 cups flour thereafter add in little at a time as needed to form a soft dough. Form into balls, roll into a log shape and then form into a crescent. Bake in a preheated oven on 160 degrees till light pink. Dredge or coat in castor sugar whilst warm.

Semolina cups

1/4-1/2 cup semolina
1 -2 cups milk
Maple syrup or sugar
Dash of vanilla
Method
1.)Boil milk with sweetener, add in semolina and whisk until smooth and no lumps and semolina is cooked through
2.)Adjust to thickness to your desired consistency and stir in vanilla essence.
3.) top with raspberries and toasted coconut.

In bowl add 3cups plain flour with 1 & 1/2tsp instant yeast, 1egg, 1tsp salt, 6tsp sugar, 1tsp cinnamon powder, 56g soft butter, make a soft dough using warm milk, knead it really well till smooth at least 15min, cover and leave to rise for few hours I left it for 3hrs, roll it out I rolled about 1/2inch thickness, cut with a donut cutter ( I didn’t have one so just used round biscuit cutter then cut out lil hole in Center, leave to rise again for another hour r two, deep fry in oil that is medium to hot *make sure u don’t fry on low heat* till golden brown deco as u like I just rolled them in cinnamon powder mixed with caster sugar...😋
Very fluffy light delicious gone in one go!
