Stuffed Chicken with sides of guacamoli, curly fries, and Rocca salad

3 big pieces of chicken fillet
1 white onion medium size
1 green bell pepper
1 red bell pepper
1 orange/yellow bell pepper
3 big pieces of mushroom
Cheese: mozzarella, parmesan, cheddar (50 gr of each, shredded)
2 table spoons Olive oil
Sprinkle of Cumin spice
1 teaspoon of salt
Sprinkle of black pepper
2 teaspoons of Paprika
How to prepare:
1- Cut the chicken fillet into 6 pieces.
2-Cut each piece from the middle, HOW:
Place the boneless, skinless chicken breast, with the tender removed, on a cutting board, and hold it flat with the palm of your non-knife hand. Using a sharp knife, slice the chicken breast horizontally into two even pieces without splitting.
3- Spice the chicken with salt, sprinkle of Cumin spice, sprinkle of black pepper, 1 teaspoon of Paprika, 1/2 lemon juice and 1 tablespoon olive. Keep for 15-30 minutes in fridge.
4- Cut the onion, belle peppers, the mushrooms and fry in a pan with the 1 spoon olive oil.
5- Add salt, pepper, paprika, and cumin to the mix.
6- Add the cheese to the mix.
7- When the cheese melts with the mix, stuff the chicken pieces with it.
8- Put inside the oven, for 40 min until roasted.
