Mid-South weather offering up an absolutely PERFECT day to throw some charcoal in the grill and smoke some meat!! Reevo's is of course excellent on hot wings, but here's a very SIMPLE, refreshing meal idea for the nice weather.
Reevo's Shrimp Tacos - 1 lb of medium raw, peeled shrimp
- 1 can of crushed pineapple
- cilantro - 1/2 a lime
- 1 bag of Mexican cheese blend
- small corn (or flour) tortillas - 1 1/2 cups of Reevo's
Before even getting your grill hot, get those shrimp in a bag and pour in Reevo's to marinate for 30min-1hr. While that's going, let's mix the pineapple, cilantro, and squeezed lime in a bowl for a simple salsa to offset the heat from the Reevo's. Salt the salsa to taste.
After marinating the shrimp, stick 'em on 3-4 skewers and throw them on the grill. Shrimp cooks fast so pay attention to them. Cook the shrimp 3-4 minutes, only flipping once halfway through.
Time to assemble the tacos. It's all about how you layer it to get that right flavor build!! For texture and enhanced flavor, run your tortillas over the hot grill for a flash cook. Lay your shrimp down first and your cheese on top of that so it melts a little. A spoonful of salsa followed by a drizzle of Reevo's will set these shrimp tacos in place!!
