🏓The other day I wrote about "healthy" foods that are high in calories because if you're struggling to get rid of stubborn body fat even though you eat healthy...you're probably eating more than you suspect. The other option is Dolores Umbridge hexed you with a nasty little curse that makes fat stick to your bones like a bowtruckle to the whomping willow. But, odds are you're just eating more calories than you think.

🌵Anyway. People told me they liked that post and they wanted another one on "healthy" foods that are low in calories. Foods that are nutrient dense and fill you up so you can stay full without blowing past your calorie allotment for the day.

FOR THE WAFFLES
300g plain flour
2 tbsp light brown sugar
2 tsp baking powder
1 tsp bicarbonate of soda
½ tsp orange zest
½ tsp salt
¼ tsp ground nutmeg
¼ tsp cinnamon
Pinch ground cloves
75g unsalted butter, melted
300ml full-fat milk
250g cooked sweet potato, pureed
5 egg whites and one egg yolk
1 tbsp sunflower oil

FOR THE SYRUP AND ROASTED APPLE TOPPING
200g light brown sugar, plus 2½ tbsp light brown sugar
1 large rosemary sprig, leaves only
4 apples, cored and cut into quarters
450ml dry apple cider
1 tsp vanilla bean extract
2 sticks cinnamon
100g thick Greek yogurt

METHOD

FOR THE WAFFLES
1. Preheat your waffle maker. Combine all the dry ingredients in a medium bowl and the melted butter, milk, sweet potato and egg yolk in a separate large bowl. Gradually add the dry ingredients to the wet mixture and stir together until smooth.
2. Beat the egg whites until stiff. Gently fold into the batter in 3 parts until combined. The batter should be thick but still able to move. Lightly brush your waffle maker with the oil. Using a ladle, pour in enough batter to fill and then bake for 8 minutes. They should be risen and golden brown. Remove and keep warm in a low temp oven until needed.

FOR THE TOPPING
1. Preheat the oven to 200°C/gas mark 6. Combine the 2½ tbsp sugar and rosemary leaves in a bowl, then add the apples, tossing together until coated. Spread in a single layer on a medium rimmed baking sheet and then bake, turning halfway through, for 20-25 minutes until tender but still retaining bite.
2. As the apples bake, start on your cider syrup. Add the cider, 200g light brown sugar, vanilla extract and cinnamon sticks along with a pinch of sea salt to a medium saucepan. Cook on low until the sugar has dissolved. Bring to a gentle boil for 10-15 minutes until the mixture has reduced to about half and thickened. Remove from the heat and leave to cool slightly.
3. Serve the waffles piled with the roasted apples and warm cider syrup and a dollop of Greek yogurt.

Ingredients:⠀
✅ 6 almonds (~¼ oz)⠀
✅ ¼ cup rolled oats (uncooked) (~1 oz/30 g)⠀
✅ ½ tsp cinnamon⠀
✅ ¼ tsp vanilla extract⠀
✅ ¼ cup Greek yogurt, plain (low-fat) (~2 ½ oz/75 g)⠀
✅ 1 ½ dates (dried and pitted) (~⅓ oz/10 g)⠀
✅ 1 peach (~6 oz/ 175 g)⠀

Instructions:⠀
1. Wash and slice peaches. Remove pits from dates.⠀
2. In a food processor or blender, pulse all of the dates and half of the peach together until finely chopped. If you do not have a food processor or blender, simply chop the ingredients. ⠀
3. Fold peach mixture into yogurt to combine, and stir in vanilla extract and cinnamon (optional).⠀
4. In a small bowl, or jar, layer oats, and almonds, remaining sliced peaches, yogurt mixture, and repeat.⠀
5. If meal prepping, store with lid in the refrigerator until ready to eat.⠀
