#Granola makes me happy!!! When I don't have time to wait for a pot of porridge to cook, or I am craving an oatmeal parfait, or I'm hungry in the afternoon and want something to snack on...this is it! I decided to try my luck at creating an oil-free granola and as far as oil-free goes, this #CarrotCakeGranola (oh boy, look at that, there are other posts with the same hashtag, eeek!!!) is pretty darn good if I do say so myself 😊 I am already looking forward to tomorrow morning when I m going to turn this into a parfait and top it with fresh apples and honey 🤗🤗🤗 Tap the pic for details!
2 C. Old fashioned Oats @bobsredmill
1/2 C. Coconut flakes
1-1/2 C. Shredded 🥕
1/2 C. Golden raisins *
3 oz Apple Sauce
1 Flax egg
2 TBS chia seeds soaked in 1/4 c. Water
1 TBS Almond Butter @justins
1 tsp vanilla extract
Spices (cinnamon, cardamom, allspice)
Sea Salt (optional but encouraged!)
Mix together the last 9 ingredients in a large bowl until incorporated evenly; add in Oats, coconut, carrots, and raisins and mix with your hands to ensure the Oats are evenly covered with the wet mixture. Spread evenly on to a prepared pan (if you have a silpat mat, use that, otherwise a little bit of coconut oil will do). Bake at 325 for about 15-20 minutes. Remove from oven and give it a stir. Replace back in oven until desired crunch is achieved (it took another 20 minutes for me). Remove from oven and let cool before placing into an airtight container :) enjoy!!!
