Along the same lines as my last burger post; however, this one is vegan! Just as delicious but with a nuttier flare, these Veggie Burgers are made with sweet potato, zucchini, walnuts and black beans. A perfect high protein, high fat and high fiber grab and go lunch! 😋~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~1 c roasted and mashed yam, 3/4 c toasted and finely chopped walnuts, 1/2 c finely chopped onion and 2 cloves garlic sautéed, 1 can black beans, 1 c shedded zucchini, 3/4 c chopped parsley, 3 tbsp gluten free flour (I use almond flour and ground flax), 1 tsp paprika, 1 tsp garlic powder, 1 tsp cumin, 1 tsp onion powder, 1/4 tsp oregano, 1/4 tsp turmeric, sea salt and pepper. Food process the black beans and walnuts together until paste-like. Mix all ingredients together in a large bowl, form into burger patties and bake on parchment paper in the oven at 350 for 15 min - flip - 15 min. Enjoy!
