Good evening everyone 🙋🏻. I hope your day was going well and you can enjoy your evening now ☺. There are no videos from me today, but tomorrow I give you a short India update again in the Insta Story. .
The wonderful @jonida.xh tagged me to tell you what my 3 favorite dishes are 😄. That's not very difficult because my food range is not so big as you know 😅
1: surprise surprise 😂. Everything with SWEETPOTATO! No matter if mashed with coconut oil, steamed, baked, filled, in cubes or as fries. I simply love it and it causes me no problems with the allergies.
2: another surprise: rice 🍚. I can eat it without anything, no problem ☺. Just rice. And there are so many different varieties and consistencies. I like sticky rice the most and for sure my beloved coconut ricepudding 💕.
3: Peanutbutter oatmeal 😍. The very sticky and creamy one 😋. Topped with a lot of fruits especially blueberries 🔵 and pomegranate seeds. I would die for it. The perfect breakfast.
If I could choose a 4. one it would definitely be pancakes 🥞. It's my highlight on every sunday. .

Hi guys, thank you for so much love on my last post! 💗💗💗 Here are some crepes I made a while ago. They are filled with homemade peanut butter and strawberries, so yummy! 😋 I will post the recipe on my blog in a few days. I have been very busy lately but I promise these crepes will be on my blog soon. 😊 I would love to enter my crepes to Alina's @plantbasedali_ ali50k party. On another note, I saw whales today!! 🐳🐳 You can see a short video in my stories. They were about 100-200 meters away from the beach so you can't see much of them, but it was an amazing experience and I am so happy and grateful that I got to see them. 🙏 Never saw a whale in my life before and today I saw two. 😍

Rice bowls alllllll day! "Fried" rice, Sesame soy tofu & broccoli. I get a lot of questions about how I make my tofu and on my blog under "main meals" waaaaay far back I have a recipe for my Sesame soy tofu which is my go to! It's easy to make and is soooooo yummy. I like to make it in a batch and have it throughout the week. Would you guys be interested in seeing a February favorites blog post?!! It'll be a combo of food, beauty, whatever else I'm feeling in this month. Let me know!

You are what you eat (and drink). It really is that simple. Granted there's years of training in between these two pics but you can't overemphasize the role of diet/ nutrition. So many people bust their ass in the gym yet fall so short when it comes to diet, keeping them at best in a neutral state. Optimize your workouts with diet!! Your body is a fine-tuned machine. Blood orange poppy seed loaf by @thehungrywarrior 🍊
Recipe: 300 gr ground almonds. 100 gr buckwheat flour. 4 tbsp poppy seeds. 1|4 tsp salt. 1 tsp baking powder. 1/2 tsp baking soda. 2 flax eggs (2 tsps flax meal mixed with 6 tsps water). 100 ml plant based yoghurt. 120 ml coconut oil. 120 gr coconut sugar or agave syrup. Juice and zest of 2 blood oranges.
Vanilla blood orange cream cheese frosting: 1 cup blood orange juice. 1/2 tsp bourbon vanilla. 2 tbsp agave syrup. 150 gr plant based cream cheese.
Mix dry ingredients (including the zest) and set aside. Melt the coconut oil and add the sugar in a small pot. Stir until sugar is dissolved. Mix with flax eggs, juice of the blood oranges, plant based yoghurt. Add to dry ingredients and fold until well incorporated.
Pour into a small greased loaf pan and bake at 180*C for 40-50 minutes. Take out once a wooden pick comes out clean. Let cool.
Meanwhile make the glaze: In a small pot heat the juice and agave syrup and let simmer until reduced about 2/3 the amount. Let cool a but then mix with the cream cheese until you have a smooth frosting.
Pour over the cooled cake and decorate with blood orange slices and a sprinkle of poppy seeds. The cake is even better next day!

Fun fact: I am/ always have been a buffalo addict. Buffalo chicken, buffalo shrimp, buffalo cauliflower, nachos...you name it. I loveee the hot spicy flavors and just can not get enough🔥Since going vegan, I knew I wanted to recreate the "chickn fingers" we tried at @veggiegrill a few weeks back. First attempt and it was a HUGE success. I can't believe the texture of these, you guysss😍 A thick crunchy hard shell on the outside and the center was soft, juicy and full of flavor. These could give hard core chicken wing lovers a run for their money🍗Paired with your typical wing sides and a homemade dairy-free ranch. This is a perfect example of balance in a vegan diet. I don't eat this sort of thing every day, but we are human and are allowed to eat (and should eat) the things that make us happy. My diet consists of 75% fruits and veggies so you bet your booty when I want some (clean) buffalo tofu bites, IM GONNA MAKE THEM💃🏼I may or may not have eaten three more after I finished because sometimes my self control goes out the window🙃
