Happy Saturday! ❀️⚑️what's everyone up to this weekend? I'm just posted up in a coffee shop updating the blog and planning for October πŸ‚

overnight oat cc chia pillowcakes!πŸ™†πŸ»πŸͺ say whaaat!! as I was prepping my overnight oats yesterday for the morning, I figured why not just make pancakes...I mean pillowcakes...with the mixture. and I did-and dang, they turned out so good! vegan, dairy free, thick and soft-shall I say more?
make them and thank me laterπŸ˜‰
1/2 c @woodstockfoods Irish-style oats, 1/2 c unsweetened vanilla almond milk, 1 tbsp chia seeds, 1/2 mashed banana, 1/2 tsp cinnamon and chocolate chips. mix all the ingredients and refrigerate overnight. in the morning, preheat your pan/griddle and coat it with vanilla ghee. using a tablespoon transfer the mixture (batter) to a pan and cook on medium-low for about 4 minutes on each side. once ready, transfer to a plate, top them off with @siggisdairy triple cream vanilla yogurt, warmed blueberries, bananas, @wild_friends peanut butter and a drizzle of @ manuka honey. It's here, it's here! Paleo Double Fudge Banana Bread and it's OFF THE CHAIN 🍫🍌So let's not waste any time, shall we?
Here's what you need:
4 eggs
4 large mashed bananas
1/2 cup almond butter
5 tb melted ghee (I used @fourthandheart madagascar vanilla ghee)
1/3 cup cacao powder
1/4 cup @bobsredmill almond flour
1/4 cup coconut flour
1 tsp baking powder
1 tsp baking soda
1.5 tsp vanilla extract
3/4 cup @enjoylifefoods mini chocolate chips, plus a πŸ’© ton more for the top
Here's how to do it:
Preheat oven to 350. In your blender (YES, your blender), add the mashed bananas, almond butter, and melted ghee. Blend lightly until just combined. Next, add all remaining ingredients and blend again, this time mixing well. Pour batter into an 8x4 pan greased with ghee, and TOP THAT ISH with a ton more mini chocolate chips. Bake for 45 minutes. I like mine just a TINY bit undercooked, so I went for 40 minutes. It's up to you. Make it. Enjoy it and loveeee it! 😍

I'm obsessed with medjool dates! Especially dipped in any kind of nut butter. I'm also obsessed with everything I've ever tried from @artisanaorganics . Their coconut cacao bliss is made with 3 ingredients: organic coconut butter, organic cacao nibs, and organic coconut sugar. Coconut sugar is low-glycemic, so I'm a huge fan of products that use that as their sweetener.

BASIC but BOMB 😜 after getting home from the Santa Monica stairs this morning, I felt like making myself a plate full of carbs, protein and healthy fats: leftover rainbow potatoes, @leafcuisine garlicky herb paleo cream cheese, ✌🏼fried eggs in avo oil and heated almond flour tortillas... YUM!

cinnamon apple raisin cookies for anytime of the day!!! how to make them --->
mix: - 2 large bananas - 1 cup oats - one small copped up apple - ΒΌ cup raisins - 1 tablespoon raw coconut - pinch or 2 of cinnamon
roll mixture into balls, cook in the oven on 350 for 10 minutes & eat for breakfast lunch or dinner!!!

Enjoying the fruit of my farmers market haul and this is legit delicious πŸ˜‹ I may or may not have ate all the sweet potato fries first (spoiler alert I did). Pre heat the oven to 425, and squeeze lemon all over the salmon, then place the fresh dill, followed by @primalpalate seafood seasoning and let cook for 30 minutes.
I served on a bed of spring mix lettuce, cucumber (that avocado πŸ‘€) and sunflower sprouts. Hope everyone is having a fabulous Saturday 😘

Today was an amazing Saturday!! 🌞🌞 after the gym and a @clean.juice date (I got the pumpkin smoothie bowl--hot damn) we went to @deeprootsmarket for their grand reopening event! We met so many cool people AND got so many free samples!!!
