Tonight's Dinner is Spaghetti Squash Lasagna with Broccolini. It taste AMAZING and actually wasn't that difficult to make. Apologies in advance for not measuring things but I'm a exhausted so rushed a bit.
Ingredients: - Spaghetti squash (cut in half)
- One bunch of broccolini
- Shredded Parmesan cheese
- Feta cheese crumbs
- Shredded mozzarella (low moisture, part skim) - olive oil
Seasonings: Himalayan salt, black pepper, basil, onion powder, and garlic powder
0️⃣ Preheat oven to 450
1️⃣ Place ~1 cup of water in a pot and place squash halves in cut-side down and steam for ~10 minutes until squash is slightly tender.
2️⃣ Remove squash from the pot/pan and place on a baking sheet face down. Bake for ~30-40 minutes at 450 (until squash is tender).
3️⃣ Meanwhile, wash and cut broccolini and add olive oil to pan and sauté.
4️⃣ Add 2 tbsp of water to pan and continue to sauté until broccolini is tender. Place in a bowl to the side.
5️⃣ Remove squash from oven and flip halves over to remove the seeds using a fork
6️⃣ Scrape squash from the shell using a fork and place it in a bowl to the side.
7️⃣ Add in the broccolini, seasonings, and cheese to the mixture.
8️⃣ Stuff the shells with the mixture then top with Parmesan and mozzarella cheese.
9️⃣ Bake for another 10-15 minutes
