Tonight's Dinner is Spaghetti Squash Lasagna with Broccolini. It taste AMAZING and actually wasn't that difficult to make. Apologies in advance for not measuring things but I'm a exhausted so rushed a bit.
Ingredients: - Spaghetti squash (cut in half)
- One bunch of broccolini
- Shredded Parmesan cheese
- Feta cheese crumbs
- Shredded mozzarella (low moisture, part skim) - olive oil

Seasonings: Himalayan salt, black pepper, basil, onion powder, and garlic powder

0️⃣ Preheat oven to 450
1️⃣ Place ~1 cup of water in a pot and place squash halves in cut-side down and steam for ~10 minutes until squash is slightly tender.
2️⃣ Remove squash from the pot/pan and place on a baking sheet face down. Bake for ~30-40 minutes at 450 (until squash is tender).
3️⃣ Meanwhile, wash and cut broccolini and add olive oil to pan and sauté.
4️⃣ Add 2 tbsp of water to pan and continue to sauté until broccolini is tender. Place in a bowl to the side.
5️⃣ Remove squash from oven and flip halves over to remove the seeds using a fork
6️⃣ Scrape squash from the shell using a fork and place it in a bowl to the side.
7️⃣ Add in the broccolini, seasonings, and cheese to the mixture.
8️⃣ Stuff the shells with the mixture then top with Parmesan and mozzarella cheese.
9️⃣ Bake for another 10-15 minutes

Saturday Morning Breakfast: Red Potato Hash Nest (inspired by @whole30recipes). I didn't have any sweet potatoes on hand so used red potatoes instead. This recipe was extremely simple and I've made adjustments to suit my likings. It taste AMAZING!
Ingredients:
- 2 red or sweet potatoes
- 2 turkey sausage links (remove skin) or ground turkey
- 2 eggs - Shredded cheese (optional)
- Olive oil

Seasonings: sea salt, black pepper, and parsley

Directions:
0️⃣ Preheat oven to 400
1️⃣ Shred potatoes
2️⃣ Grease muffin pan with olive oil
3️⃣ Place potato hash in pan spreading around sides and leaving a dip in the middle . Add seasonings (just salt and pepper
4️⃣ Bake potatoes for 10 minutes then remove from oven
5️⃣ Meanwhile, cook ground turkey sausage and place to the side
6️⃣ Add turkey sausage to hash, the crack an egg over each nest
7️⃣ Season top of egg with seasonings
8️⃣ Add cheese to top and place in the oven for 15-20 minutes (user shorter time if you want a runny egg

Pork Ramen Noodle Soup 🍜 Recipe Cont. (Broth preparation): Ingredients:
- 8 cups of water
- 5 oz of Pork flavored soup base
- Shiitake Mushrooms
- Thinly sliced Green onions
- 4 tbsp unsalted butter
- 4 tbsp of low sodium soy sauce
- 3 tbsp of sesame oil
- 2 tsp of ginger
- 2 tbsp minced garlic - Boiled egg

Directions:
1️⃣ Bring water to a boil and add base
2️⃣ Mix well then add mushrooms and green onions
3️⃣ Add remaining ingredients and boil at medium to low temperature for 15-20 minutes
4️⃣ In a separate pot, bring 2-3 cups of water to a boil
5️⃣ Add 1 tbsp of olive oil and then add dried ramen noodles
6️⃣ Boil noodles for 2-3 minutes until tender
Pour broth into a bowl then add noodles and pork. Cut the boiled egg in half and add it in last. Pork Ramen Noodle Soup Recipe (Pork Roast Preparation): Ingredients:
Pork Roast, Olive oil, garlic salt, black pepper, onion powder, paprika, thyme, and parsley

Directions:
0️⃣ Preheat oven to 450 degrees
1️⃣ Wash roast, then pat it dry with a paper towel
2️⃣ Season the roast on all sides
3️⃣ Heat approximately 3 tbsps of olive oil in a pan at medium heat
4️⃣ Brown all sides of roast then transfer to a baking dish along with remaining oil
5️⃣ Bake at 450 for 15-20 minutes then reduce heat to 300 for 15-20 minutes
6️⃣ Remove from oven, cool, then slice into thin slices
7️⃣ Set meat aside

Tonight's Dinner (still brewing): Chicken and Eggplant Teriyaki Stir Fry

Ingredients:
- Chicken tenders (4)
- Eggplant 🍆 - Onions and Bell peppers 🌶 - Sliced mushrooms
- Broccoli and carrots
- Minced garlic -Vegetable broth
Seasonings:
For chicken: Himalayan sat, black pepper, garlic powder, onion powder, and parsley

Sauce ingredients: - 1/2 cup of teriyaki marinade
- 1/2 cup of low sodium soy sauce
- 1/4 cup of Worcestershire sauce
- 1 tbsp of sesame oil

Directions:
0️⃣ Slice and dice all veggies and chicken
1️⃣ Sauté broccoli and carrots in large pan with olive oil and add ~3 tbsps of vegetable broth to simmer for 5-10 minutes
2️⃣ Season chicken and add to a separate pan of olive oil and minced garlic. Cook until blackened and place to the side
3️⃣ Add olive oil and minced garlic to clean pan and sauté Eggplant and mushrooms
4️⃣ Combine all cooked items in with broccoli and carrots and add sauce ingredients
5️⃣ Reduce heat and simmer for 10 minutes
6️⃣ Remove from heat and SERVE! 👩🏾‍🍳 Stay tuned!

Sunday morning breakfast complete! This recipe was whipped up using shrimp and sausage from last night's seafood boil.
Ingredients: chopped onions, minced garlic, diced tomatoes, olive oil, and 1/2 cup of low sodium chicken broth

Seasonings: Himalayan salt, black pepper, garlic powder, onion powder, paprika, and parsley

Directions: sautée onions and minced garlic in olive oil over medium heat. Add shrimp and sausage along with seasonings and sautée a few minutes more. Then add chicken broth and reduce heat and simmer for 5-10 minutes.
