overnight oat cc chia pillowcakes!🙆🏻🍪 say whaaat!! as I was prepping my overnight oats yesterday for the morning, I figured why not just make pancakes...I mean pillowcakes...with the mixture. and I did-and dang, they turned out so good! vegan, dairy free, thick and soft-shall I say more?

1/2 c @woodstockfoods Irish-style oats, 1/2 c unsweetened vanilla almond milk, 1 tbsp chia seeds, 1/2 mashed banana, 1/2 tsp cinnamon and chocolate chips. mix all the ingredients and refrigerate overnight. in the morning, preheat your pan/griddle and coat it with vanilla ghee. using a tablespoon transfer the mixture (batter) to a pan and cook on medium-low for about 4 minutes on each side. once ready, transfer to a plate, top them off with @siggisdairy triple cream vanilla yogurt, warmed blueberries, bananas, @wild_friends peanut butter and a drizzle of @ manuka honey.
