Happy Coeliac Awareness Week! 🎉My daughter was 3 years old when she was diagnosed coeliac in 2013 and my world turned upside down. Although I felt Seriously Daunted at the thought of running a strictly gluten free kitchen, I also felt as if the universe had my back: serendipitously, the very next day was the Gluten Free Food Show, plus the beginning of Coeliac Awareness Week. I grabbed all the info I could, loaded up with gf essentials & treats, signed up to Coeliac NZ @coeliacnewzealand on the spot & have been a member ever since. I’m so grateful that we started our gluten free journey fairly recently - there are so many amazing options available now, as opposed to the days of paying top dollar for tough-as-cardboard baked goods. Ever since my trip to the US I have had a weakness for Reese's pieces, but as much as I love them, my waist doesn't! This is my healthy spin on the peanut and chocolate flavour I love so much. .
Can you believe this is made with beans??! Say whaaaaat??!! Gluten, dairy free AND only 1sp (0sp without PB). Texture is a lot like a chocolate brownie. 😋😋
♡1 can butter beans & 1 can kidney beans drained and rinsed + 5 eggs + 2 ripe bananas + 6 medjool dates + 1tbs sf maple syrup + 2tbs @waldenfarmsinternational chocolate flavoured syrup + 1tsp natural vanilla extract + 2tsp cocoa powder + 2tsp natvia + 2tsp baking powder + 1tsp ground cinnamon + 1tsp mixed spice + 1/2tsp nutmeg ♡Pop all ingredients in the food processor and blend until smooth (make sure the mixture has no lumps) ♡Pour mixture into a lined square cake tin ♡Bake @ 180° for 1 hour, or until cooked through ♡Top with @macr0mike PB and @waldenfarmsinternational chocolate flavoured syrup ♡ 0 Smart Points .

Purée 3.5 ounces of sun dried tomatoes, 4 tbsp olive oil, 2 tbsp pasta water, 2 garlic cloves, 1/2 cup packed fresh basil, 1/6 cup grated Parmesan

Crispy AF Salmon Tacos! 🍣🌮
Bought some yummy salmon at the Farmer's Market. It was farmed but organic and hormone and antibiotic free. I prefer wild caught (who doesn't) but the man said this had more Omega 3's so I thought I'd give it a try! And it was delicious! I made a thick miso ginger glaze that coated the fish and made the fish all nice and crispy on top. 🤤 I threw the salmon on an organic blue corn tortilla with @organicgirl romaine, red onion, and a dollop of @fage on top! And WOW! I'll be having this again tonight!

I could eat these low carb steak fajitas with guacamole everyday!

Paleo Steak Fajitas with a Kick


2 lbs. flank steak
1/3 cup extra virgin olive oil
2 tbsp Paleo Worcestershire sauce
1/4 cup fresh lime juice
3 cloves garlic, minced
2 tsp honey
2 tsp cumin
2 tsp chili powder
1/4 tsp red pepper flakes
1/2 tsp salt
1/4 tsp pepper
1 large onion, thinly sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
2 tbsp coconut oil, divided
Avocado, for serving
Cilantro, for serving


1. Stir together the olive oil, Worcestershire sauce, lime juice, garlic, honey, cumin, chili powder, red pepper flakes, salt and pepper in medium bowl. Pour half of the marinade into a separate bowl. In one bowl, place the steak and turn to coat. In the other bowl, place the veggies and toss to coat. Cover both bowls and place in the refrigerator to marinate for 1 hour.

2. Melt one tablespoon of coconut oil in a large skillet over medium heat. Add the marinated veggies and sauté for 3-4 minutes, until just cooked but still crispy. Remove from the skillet to a plate. Set aside.

3. Melt the remaining tablespoon of coconut oil in the same skillet and add the steak. Cook for 2-3 minutes per side. Remove to a cutting board and let rest for 5 minutes. Slice the meat into thin strips against the grain. Serve with veggies and lettuce wraps, topped with avocado and cilantro.
