I love the energy of a networking event in a busy city. I met some great, great people. Now back to the country for some quiet, relaxation, and planning for my pilot submission.

// A fantastic Low FODMAP pasta sauce recipe – no onion or garlic needed! Serve over low FODMAP pasta or zucchini noodles for an easy meal!

Low FODMAP Pasta Sauce
.
1 (28 oz.) can whole peeled tomatoes*
¼ cup garlic-infused olive oil
½ tsp. dried basil
¼ tsp. dried oregano
⅛ tsp. red pepper flakes, optional
Salt, to taste
.
Place all ingredients except salt in a blender. Pulse until desired sauce consistency is achieved. Set aside.
Pour sauce into a large saucepan and heat over medium-high heat. Bring to a boil, then reduce heat and let simmer for 15 minutes, stirring occasionally. Season with salt and serve.

Serves: 8

* Canned Tomatoes: A low FODMAP serving is 1/2 cup or 92 grams

Needed something fast and easy for supper, so I threw together this chicken and rice dish. I wanted to share it with you all because it turned out so good! 😋 • • Rice with Chicken, Peas and Carrots 🥕🍗 12.5 oz. canned chicken, drained
3 cups regular sodium chicken broth
1 cup water
1 cup long grain white rice
About 1 - 1 1/2 cups frozen peas and carrots
1/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. dill
1 tsp. dried parsley
Combine all ingredients in a large skillet. Bring to a boil. Reduce heat to a simmer, cover and cook for 15 minutes. Stir occasionally. When the 15 minutes are up, turn off the heat and let it sit for 5 minutes with the lid on. (👩🏻‍🍳Tip: This will help the grain absorb more liquid.)
