It's been over 20 years since I first learned about my food allergies. Not only have I come a long way, but so has food. 20 years ago, gluten free bread tasted like cardboard. And good luck finding an alternative to chocolate cake that wasn't also filled with crap (and didn't taste great either). Nowadays, food can be equally nutritious, delicious and easy.
20 years ago... scrap that, 10 years ago, I was malnourished and living a processed and nutrient bankrupt diet. It's been an incredible journey to get where I am today: nourished and vibrant, energized and healthy. I am so grateful for chocolate cakes like this because it helps me to reflect on how far I've come... in health and life.
