So, here's one of the goodies I found before I decided I was gonna try and make this whole keto thing vegan. I popped it in the oven last night when I finally got the chance to eat. It was pretty late, so I was looking for something easy. So, for all of you out there that are keto and NOT vegan.. here ya go! Only 4 carbs for half the pizza. I paired it with a green loaded salad and it definitely did the trick! Thank you to whoever shared this brand in my keto FB group!

So, this was absolutely fantastic.. and SO easy!
I decided to finally try out tin foil dinners, so I just packed all this goodness into a foil pack, put it in a glass dish, and baked it for half an hour - πŸ’₯done!
That yellow stuff right there is cauliflower rice with turmeric, and it was πŸ‘ŒπŸ» better than expected!
So, I put the salmon and green beans in the foil with some grass-fed butter, garlic, salt and pepper, as well as squeezed some lemon slices over everything and then let them sit on top of the salmon while baking.
I made the cauliflower rice on the side by grating it in the food processor (or you can use a cheese grater), and then you just throw it in a warm pan with coconut oil, salt, pepper, and turmeric. This will definitely be a new staple, because there really wasn't much of a difference from using rice, in my opinion.
I'm no longer counting and keeping track of things, I'm eating intuitively and I'm just gonna see where it gets me. Tracking your food is helpful for many reasons, especially when starting a new diet, but it's no way to live long term. If I start to feel bad or gain weight or start to plateau, I will track and adjust once again. But I have a feeling about what I'm doing.. I think I know how I need to do this, so I'm just gonna give my intuition a chance to call the shots on this next phase. Now that I know what my body was missing and getting too much of, I feel like I can adjust accordingly and create a diet that works specifically for me.
Let's see what happens!

Dire straights here people.. so far I've tried swerve and stevia drops (the skinny girl ones, so perhaps that was my first mistake). This is how I start my day. I take 1 tbsp of apple cider vinegar in a glass of water to help lower my insulin along with fasting Monday to Friday from 8 pm to 12 pm - a 16:8 fast.
