THROWBACK THURSDAY .
At the weekend was racking my brain what vegan dish to make for a event....
I did share it on my story and said I will share the recipe...so here it is...
🌽SPICY CORN FRITTERS🌶
2 Cups tinned sweetcorn
1 Cup Chopped Red & Green Peppers
1/2 Cup Chopped Onions/Spring onions
Handful of Coriander
1 Cup Corn Meal Maize
1 Cup Flour
1 Cup Rice Flour
1/2 Tsp Baking Powder
Salt & Pepper to taste
2 Large Avocados
1/2 Chopped Onion
Salt & Pepper to taste .
THE METHOD IN THE MADNESS...
Blitz the corn meal, half the onion and 1 tin of sweet corn in a blender.
Once blitz add to a bowl with the chopped ingredients. Add the salt, pepper, garlic, baking powder and coriander, mix together.
Add the flour and rice flour to the mixture and thicken...you may need to add more flour if the mixture is too runny. Only add till u can make patty is you hands...will be sticky so be ready to get your hands dirty.
Add a little oil to your hand and make the small fritters and place them in a frying pan with a little oil.
Cook till golden brown!
The dip just blitz and add the onions and coriander at the end!
