actually becoming slightly concerned that I’m going to turn a yellow/ orange hue with all the winter vegetables ive been consuming #betaglow 😅🤗 but im v. into this butternut squash soup thing and i don’t even like soup 🍲 but topped with some greens for good measure + cranberries & pistachios...this is what you need to do. Go to my blog... or since laziness prevails here’s the recipe 👇🏼 .

roast up a whole butternut squash at 400 for about 45-50 mins. Cut into cubes. Add to your vitamix w/ any spices. I did turmeric, cinnamon, sea salt, pepper, few pinches of nutmeg, 1/4 cup nutritional yeast & started off with about 2 cups of almond milk or use coconut milk. Blend until supperrr creamy. Add more milk for desired consistency & adjust spices. Heat back up on stove if need. Eat it. Usually top mine with spinach, nuts, or sautéed apples & sometimes I add in collagen 👌🏻

I’m really, really bad at wrapping tortillas into burritos 🤦🏻‍♀️ so I improvised and made these deconstructed breakfast burritos instead! Basically the same thing, right? 😂 they’re filled with eggs, red bell pepper, mushroom, avocado and @drpraegers four potato puffs — I’ve loved adding potato to my breakfast burritos since college, and these are SO good! Kicking Monday off with one of the greatest stacks of pancakes I’ve ever had 🙋🏻🤤 To make them, mix 1/4 cup @almondpro flour (you can probably use normal almond flour, coconut flour, oat flour, or normal whole wheat flour as well), baking powder, cinnamon, sea salt, 1 heaping scoop @nuzest_usa vanilla protein (use my code “kitchenofdan” for 15% off!). once mixed, add in 1/2 ripe mashed banana, 1/3 cup pumpkin purée, 2 eggs, 3/4 cup almond milk, & dash of vanilla extract. Mix well and let the batter sit while you heat a pan (I cooked mine with @fourthandheart vanilla bean ghee)- cook until the underside is done, then flip & cook for 1-2 more minutes. Once done, stack me up & go ham on toppings 💃🏻 I went with fruit, @thecoconutcult cream, @wild_friends PB (droooollllll) & @wedderspoonofficial honey 🤗 happy monday everyone, & let me know if you make these- seriously too die for 😎

You can make your Monday better in just 3 easy steps:
1) make a box of brownies according to the directions (I use @aldiusa brownie mix because it is the best ✊️) 2) To make Dulce de Leche: Simmer 1 can sweetened condensed milk in water for 3 hours (see my story)
3) Cut brownies and top with a dollop of dulce de leche and sprinkle with salt.

I have been pretty terrible at giving credit to all the amazing companies that spoiled Scotty and I while on the Trail. Салат с грибами жареными

Ингредиенты:
-500 г грибов (в идеале лесных, но и шампиньоны подойдут)
-Две луковицы
- Две сваренных картофелины
- Два яйца сваренных вкрутую
- Один плавленый сырок
-Приправы: соль, перец и майонез

Приготовление:
Готовим маринад: две столовых ложки уксуса и сахара смешиваем со ста граммами горячей воды.
• Нарезаем лук полукольцами, заливаем кипятком и оставляем на 20 минут. Затем воду сливаем, заливаем лук маринадом и вновь оставляем, но уже на 30 минут. После этого сливаем маринад и промываем лук холодной водой. • Режем грибы, обжариваем на растительном масле, затем добавляем соль и перец. • Уже сваренный картофель нужно натереть на терке, а яйца мелко нарезать.
• На крупной терке натираем сырок.
Готовые компоненты выкладываем в следующем порядке:
• Картофель
• Грибы
• Лук
• В виде сетки выкладываем майонез
• Яйца
• Натертый сырок
• Сверху обильный слой майонеза.
• Салат готов, подаем к столу
