I have seen a lot of ways to check the sharpness of a knife. Everything from fingernail scraping to shaving arm hair. My preference is to put 3 fingers on the blade and slide them along the cutting edge.
If your knife needs some love on the stones you will know. You WILL HAVE NO fear to slide your fingers along the knife's edge with varying degrees of pressure depending on how far the edge sharpness has degraded.
If your knife is razor sharp and ready to work you will know. You WILL have fear to slide your fingers along the knife's edge and your fingers will stick to the blade.
This is what Murray Carter instructs in his sharpening material (google his 3-finger test for a visual). He is right on he money that your body is smart and that your nervous system will tell you everything you need to know about how sharp your knife really is.
