PURTY PISTACHIO PESTO! Tonight's dinner was my FAVOURITE new recipe of the WHOLE YEAR! I tried out the delightful @paleowithmrsp pesto baked chicken, which uses pistachios in place of pinenuts, and oh me oh my it was tasty delicious! I accompanied it with the motherload of all veggies - carrots, zucchini, snow peas and broc in a sauteed bishop chilli and spring onion dressing; corn on the cob; carisma potato dry fried in smoked paprika; and baked herbed tomatoes. HEAVEN! We will be repeating this winner for sure! I wish I took a picture of the bright green pesto before I baked it!
