The squash blossom was filled with an excellent corn mousse and the infamous corn smut known as cuitlacoche, a Mexican delicacy. Served with a very nice and light corn soup. You could say this course was a celebration of all things corn, that wonder crop of ancient Mexico that sustained a multitude of people over millennia to this very day 🌽
