New Summer Soup Creation! So simple and delicious! I made this using 1 can green beans, 1 can sweet peas, 1 can corn, and 2 cans garbanzo beans. I combined all of that in 4 cups of vegetable broth. I seasoned it with garlic & onion powder, cumin, red pepper, turmeric, salt, and pepper. Then I chopped up some fresh parsley and chives from the garden. Vegan Mexican Stuffed Sweet Potato Skins with Maple-Chipotle Chickpea Dressing! These healthy potato boats are to die for! The skins are stuffed with mashed sweet potato, black beans, sweet corn, red pepper, red onion, spices and drizzled with an amazing low fat no-oil chick pea dressing. The skins recipe is from @glutenfreeveganpantry and the dressing recipe is from @dreenaburton. For the skins, my only modification was to skip the oil and use a different dressing. As for the dressing, I should mention that it is also amazing on salads! It's made with chickpeas and has no oil! Both so yummy! 🌱🍠🚣🏻‍♀️🍠🌱
