~White chocolate cranberry macarons~
These babies are filled with a white chocolate ganache, and have a center of homemade cranberry curd. The flavors really pair nicely together, sort of a tangy/sweet combo. Show me with an emoji what your feeling about cranberries are! My 5 year old son snuck a sugar covered cranberry on Thanksgiving, popped it into his mouth and started chewing. After a few seconds he spat it out in disgust and pronounced that it was very rotten. 🤣🤣 not an all together enjoyable experience for him!
Here is the recipe for cranberry curd if you guys would like to try it-
12 ounces of fresh cranberries
1 1/2 cups sugar,
3 large eggs
2 egg yolks
pinch of salt
1/2 cup fresh orange juice
1/2 stick cold unsalted butter, (cubed)
Bring the cranberries, 1 cup of the sugar, and 1/4 cup water to a simmer in a small pot. Allow the cranberries to simmer uncovered, for about 15 minutes until they are soft and juicy, and mixture is thick. Let cool slightly and then puree with an immersion blender until smooth.
Whisk the puree, the eggs, yolks, salt, orange juice and 1/2 cup sugar into the cranberries, and set over medium heat. Cook, stirring constantly, until the mixture thickens and coats the back of a spoon. Stir constantly to prevent curd from burning.
Push the curd through a mesh strainer, discard any skins and lumps.
Drop cold butter into curd one cube at a time, and stir until smooth. Allow curd to reach room temperature before using. .
