If you’ve been watching my stories lately you’ll know I’m having a cauliflower rice moment 😂 I love normal rice but I always feel so bloated and lethargic when I’ve eaten it so this alternative is such a winner! Plus it’s lower cal so I can eat more 😉 this cauli rice bowl is mixed with sun-dried tomato pesto and spinach and is just so simple and delish 👌🏻 hands up cauliflower rice fans?! 🙌🏻

• Roast chicken 🍗 • This lovely, 2kg+ chicken has been slathered with chopped rosemary and thyme, butter and sea salt, and stuffed with more herbs and garlic. It has yielded 5 meals so far, with another one to come from the stock I made using the carcass (risotto!). .
