Coconut rice for (3-4 servings )
1 tablespoon olive oil
2 cups rice, washed
1 1/2 cups coconut milk
1 1/2 cups chicken stock
2 inch whole ginger root
1 fresh whole chilli
Salt to taste
Chopped parsley and scallions to garnish
Add olive oil to a large pot over med- high heat, add in rice and stir to combine . Keep stirring whiles toasting rice for about 3 mins. Pour in coconut oil and chicken stock. Throw in aromatics ( chilli and ginger ) and add salt to taste . Cover ( with aluminum foil before the lid to trap in steam) and reduce heat to med low . Cook rice for about 15-20 mins or until done . Discard aromatics . Fluff and serve!
TIP: not pictured here, garnish with toasted coconut for a more coconutty flavor .
