I was going to meal prep for the week yesterday... and then the power went out🤦🏽‍♀️

You never realize how much you depend on something until it’s gone! I kept thinking of other recipes I could make, but as it boiled down, everything required some form of electronic device.
Great.
Well, at least I had just made a tub of hummus!!

When the power finally came back on, I had about an hour left before baby girl needed to start winding down for bed so I quickly whipped up this meal of raw vegan sushi.
These probably took me a total of 30 min to make, although I’m extremely efficient and productive when I know there’s a ticking time bomb💪

Ingredients:
Nori • sunflower seeds • miso (I used chickpea) • fresh ginger • cilantro • avocado • cucumber • carrots
To make:
Soak 1 1/2 cups sunflower seeds in warm water while you cut veggies into long thin sticks • strain sunflower seeds and place in food processor with half a thumb of ginger and tbsp of miso (or to taste) • process until rice-like consistency and holds together well (I processed this batch a little more than usual) • spread seed mixture on bottom 3/4 of nori • lay veg in middle • wet top end of nori to help seal as you roll up • roll • cut in 6 pieces
I personally would rather not eat sushi without wasabi & soy sauce, although it’s optional as the miso and ginger give it so much flavor!
