First race back! Running has had an extremely strong impact on my life. In September during a work out with my team, my knees seized and locked. After countless tests, physio and doctors appointments they informed me that there was no injury; however the pain was real and in every single joint in my body. There were days when I physically could not get out of bed. I missed the entire cross county season, but my friends, coach, and family helped me get through this hard and mysterious time. Apparently it's fibromyalgia; a chronic pain condition, that can ebb and flow. Doctors still aren't fully aware of what causes it. It's important to recognize and acknowledge your pains, and know that, that does not make you weak. I was not able to hit my times, but setbacks are just new challenges and goals to overcome. Post work pre workout snack for the week. Just blended up my fav ingredients, pressed the mix into a pan, and popped it in the oven for a little toasted taste. They have oats, dates, peanut butter, cashews, cacao powder, coconut, and flax seeds in them. Making your own granola bars is so easy and it is so nice to customize them to your liking without all of the weird unnecessary additives included in store bought bars. Not only that, but making your own is also way cheaper!

ONE month into the planet based life and never looking back! ๐Ÿ‘Š๐Ÿป Feeling stronger, leaner, and overall more healthy! The best part about this change in my life is that it isnโ€™t a fad diet itโ€™s a lifestyle. I used to only care about getting enough protein and the right amount of calories. But in the end, thatโ€™s not necessarily the best route to take for our bodies overall well being. Iโ€™m now consuming half the amount of protein I was, keeping my muscle and losing inches around my waist and thighs. Itโ€™s not a hoax people!! Feed your body the fuel it really needs. Today I've made apple porridge by adding sliced apple to the oats while they simmer. Mixed in almond butter, spices and done, so simple and so delicious and warming.

I have to admit that I eat oats every single morning ๐Ÿ˜› I put them in my smoothie bowls, overnight oats, porridge, chia puddings... and of course baked oatmeals ! This one was smooth, tender but at the same time crunchy ๐Ÿ˜ซ๐Ÿ˜‹

Perfected my banana breadโ€™s recipe and itโ€™s ๐Ÿ‘Œ๐Ÿผ๐Ÿ˜‹ Itโ€™s gluten-free, dairy-free, made with just natural sweeteners and has a vegan alternative (for the eggs). โ€ข
MAPLE WALNUT BANANA BREAD๐Ÿž๐ŸŒ
โ–น3/4 cup gluten-free flour
โ–น2 bananas
โ–น1/4 cup coconut flour
โ–น1/3 cup maple syrup
โ–นa handful of walnuts
โ–น3 tbsp melted coconut oil โ–น2 eggs (1tbsp flaxseed meal + 2.5tbsp water, stir and let rest for 5min to thicken)
โ–นa pinch of salt + cinnamon
โ–น1tbsp of baking soda and baking powder

Preheat the oven to 180ยฐC
In a large bowl, combine the dry ingredients and in another bowl, the wet ingredients. Add the wet ingredients and mix well.
Fold in the chopped walnuts and add on top half of a banana (you can freeze the other half for a smoothie ๐Ÿ˜›)
Pour the batter in a loaf pan and bake for 45-50min.

Warmed up with clean and snatch progressions, front and back squats and RDLโ€™s.
