I love using berries 🍒 when it comes to desserts! Here's my take on the Australian Pavlova with the fresh produce I got delivered from @myqandc 😊 www.myqandc.com
6 egg whites
375 grams castor sugar plus one tablespoon for the cream
1 1/2 teaspoons white vinegar
3 teaspoons cornflour
1 teaspoon vanilla
1 cup whipping cream
300-400 grams of fresh berries (strawberries, raspberries, blueberries, blackberries)
Juice of half a lemon
1/2 cup berry preserve
Mint leaves to garnish
Whisk the cream and add a tablespoon of sugar a when its starts to thicken. Whisk until firm and leave it in the refrigerator for later use.
Preheat oven to 140C.
In a clean mixer, whisk the egg whites until soft peaks are formed.
Then, add one tablespoon of sugar at a time while it whisks.
Lastly, gently fold in the vinegar, cornflour and vanilla with a spatula.
Line a baking tray with parchment paper.
Draw a circle using any round plate of 8 or 9 inch. Place half of the mixture in it and spread it such that the outer part is higher than the center.
Bake it in the preheated oven for an hour. You will notice that the outside looks firm and starts to crack a bit on the outside.
While it is cooking, heat the berry preserve along with the lemon juice in a pan. Once it loosens up, add some of the fruits. Mix well. Allow it to cool.
Place the cooked meringue on the serving board. Spread the whipped cream generously over it. Pour the berry preserve mix and then add all the fresh berries as well.
Garnish with mint leaves.
