Discarding #fruitseeds as leftovers!
Fruit seeds are harder than the meat for some obvious reason, i.e. cellular density. So, while we avoid the seed because of its hardness and extreme taste, it is time to know why such is the case, at least 70% of the antioxidant in an avocado is concentrated in its seed which should explain its extreme taste, and it is not exclusive to the fruit.
“The total antioxidant capacity and phenolic content of edible portions and seeds of avocado, jackfruit, longan, mango and tamarind were studied. In addition, the relationship between antioxidant activity, phenolic content and the different degrees of heating of mango seed kernel was investigated. The seeds showed a much higher antioxidant activity and phenolic content than the edible portions. The contribution of all the fruit seed fractions to the total antioxidant activity and phenolic content was always >70%. So, the next time you make yourself a glass of chikoo smoothie, do sprinkle some chikoo seed powder on it.
