Before going on holiday this summer we had lots of fruits left in the fruit bowl, which I didn’t want to get rid of. So I decided to cut them up roughly and freeze them. .
Yesterday the boys were having friends over after school and I wanted a dessert, hence why I plunked my frozen fruit straight in a saucepan when at got up at 5.30am and then let them simmer with a split vanilla pod while I was doing some work. I whizzed the fruit up with a handful of chia seeds to stop the mixture being so liquid and there I had a summer fruit compote ready for testing at breakfast! .
