Creamy Butternut Hummus Recipe 👩🏽🍳🍴❤️ #OhSoGolden
This recipe is proof that you really don't need a kitchen full of fancy and expensive ingredients to create a great snack or meal.
1 medium butternut
5 cloves of garlic
2 teaspoons of chilli flakes
2 tablespoons of lemon juice
1 teaspoon of lemon zest
1 teaspoon of chopped fresh coriander
4 tablespoons olive oil
1/4 teaspoon ground cinnamon
1/4 teaspoon turmeric powder
1 tablespoon honey
2 tablespoons plain yoghurt
salt and pepper to taste
Preheat oven to 180C
Cut butternut into half, then cut each slice into 4 wedges.
Place butternut wedges, 4 cloves of unpeeled garlic on a baking tray.
Drizzle with olive oil and sprinkle chilli flakes, cinnamon and a pinch of salt and pepper.
Bake in the oven for 15 to 20 minutes or until butternut is golden brown and tender.
Peel roasted garlic and remove skin and seeds from roasted butternut.
Puree the remaining ingredients together with roasted butternut and garlic in a food processor or blender until smooth.
Add more olive oil if needed
Add salt and pepper to taste
The creamy butternut hummus is full of flavour, slightly sweet, smooth and really really tasty. It can be enjoyed with naan or pita bread, fresh vegetables, crackers or breadsticks and even as a spread on sandwiches.
