The old throw everything on a bed of quinoa and call er dinner!
This is actually one of our favourite meals and there’s rarely ever any leftovers.
Roasted veggie overload on quinoa.
Veggies are tossed in oil and seasoned with garlic powder, onion powder, paprika, cumin and salt and pepper. I also topped the veggies with green onions, dill and cashew blue cheese (bought and not made)
Roasted Veggies - red and green peppers, onion, green beans, carrots, zucchini, beets, yellow and red cherry tomatoes and green heirloom tomatoes!
I put the root veggies in the oven first and stagger the rest knowing they roast fast!
