Like @penandpaperstrengthapp posted earlier today: Friday is for “Bangin’ weights and eatin’ steaks!” Listen to the sizzle of our searing @invadercoffee rubbed grass-fed sirloin filets! I’ve posted this dinner favorite many times but haven’t shared the recipe in a while, so here it is:
Two 1.5lb grass-fed sirloin or ribeye steaks (we’ve done both and they came out great, but @donovan.santas and I prefer the sirloin)
2 TBS olive oil brushed onto all sides of steaks before adding the rub on one side only of each steak.
Mix together for the rub: 1/8 cup ground @invadercoffee , 1/8 cup chili powder, 1 tbs paprika, 1 tbs dark brown sugar, 1/2 tbs dry mustard, 1/2 tbs coarse sea salt, 1/2 tbs fresh ground pepper, 1/2 tbs ground coriander, 1/2 tbs dried oregano, 1 tsp ground ginger, 1/2 tsp cayenne. Depending on the size of your steaks, you will likely have extra rub to save for another round (especially if you only put rub on one side of each steak); I freeze extra rub to keep it fresh.
Heat cast iron skillet on high. Sear steaks 3-4 min rub-side down first, then turn and sear bare side 2-3 minutes. Transfer to baking sheet and put in a 425 oven for 8-10 min (for medium rare). Let rest 5 min before slicing.
If you swipe to see the picture of the finished product, you’ll see that we had grilled asparagus and organic white sweet potatoes as sides (I put Sriracha on mine because I like everything spicy!), and paired it with an inexpensive but delicious @line39wine Pinot Noir ($8.99 but tastes like a $20+ bottle).
