French Apple Cake
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 stick (1/2 cup) butter, at room temperature
2/3 cup sugar, plus more for sprinkling over cake
2 large eggs
1 teaspoon vanilla extract
3 tablespoons apple juice (or dark rum!)
2 apples, peeled, cored and cut into 1/2-inch cubes
Powdered sugar (optional)
Preheat oven to 350 degrees.
Grease and flour a 9” pan. A springform pan works great!
In a mixing bowl, beat together sugar and butter. Add eggs, vanilla, and apple juice. Beat well. It will look grainy. Add flour, baking powder, and salt until combined. Stir in chopped apples with a spoon.
Scrape into pan and sprinkle a tablespoon of sugar evenly over the top.
Bake for 40 minutes or until lightly brown and toothpick inserted in the center comes out clean.
Let cool. Remove from pan if desired. Sprinkle the top with powdered sugar. *
