Ingredients
1 1/2 lbs Chicken, thawed and cut into tender-size strips
1/3 Cup sesame seeds
1/3 Cup Flax Seeds
1 egg, whisked in a bowl ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Directions
1. Preheat oven to 425 degrees
2. In a food processor, blend the sesame seeds and flax seeds together, put mixture on a plate.
3. Dredge each chicken piece in the egg and then into the seed mixture, coating each piece thoroughly
4. Place chicken tenders on a greased cookie sheet and bake for 15 minutes or until cooked through

Last night’s dinner: taco stuffed peppers 🙌🏻 in tracking my meals both formally and informally, I notice that I prefer the carbs during the day and something like this for dinner. But the point I really want to make is about dairy - I have found that LOW FAT, not NON FAT, is best for me with running 15+ miles per week. Eating non-fat dairy left me feeling without any energy, and full fat dairy made me feel like I was bloated 😫. Low fat seems to be where it’s at for me as a runner. It seems to sustain but not weigh me down. That’s why I loaded these with reduced fat Mexican cheese 😁
1. One pound ground turkey cooked in taco seasoning
2. 4 large peppers, halved
3. One cup frozen corn
4. One bag microwave brown rice

Cook meat and rice, mix together, fill the peppers, top with Mexican cheese blend and bake for 30 on 350! -

Ingredients
2 Cups Greek Yogurt
2 Tablespoons Honey
1 Stalk Vanilla Bean, scraped (we just used vanilla bean paste and put in 1 Tablespoon)
2 Cups Rolled Oats
1/2 Cup Coconut Oil, melted
1/4 Cup Honey
2 teaspoons vanilla
1 egg
1 teaspoon Baking Soda
1 Pinch Salt
1/2 Cup Dark Chocolate Chips ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Directions
1. Preheat oven to 375 degrees
2. Combine Greek Yogurt, honey, and vanilla. Transfer to a freezer-safe container and freeze for 2 hours, or until ice cream is thick and creamy but still scoopable
3. Add oats to a food processor and pulse until it becomes a flour-like consistency
4. Combine coconut oil, honey, vanilla, and egg into a large bowl. Add in oats, baking soda, and a pinch of salt and mix thoroughly. Fold in chocolate chips
5. Form balls with the cookie dough and place onto a greased sheet pan. Using your hands, press firmly down on each bowl to make a cookie shake.
6. Bake for 8-10 minutes, or until golden brown.
7. Let cool and take ice cream out of freezer to soften. Make ice cream sandwiches and enjoy!! Recipe from @goodful

Drain tinned mushrooms and chop into smaller pieces.Fry them with chopped bacon until cooked, Add fresh garlic or garlic granules. Add risotto rice (75g portion for an adult, 30g for a toddler) and fry until you can smell it toasting. Add peas. Have 2 stock cubes of stock in a pan on a low heat and keep adding the stock and stiring until the risotto looks creamy (I put quite a lot in each time and stir, then leave it to absorb, then put more in etc).Add cheese, black pepper and a squirt of lemon juice

y’all know i’ve been stuck on at least some variation of this meal bowl for weeks now & that’s because it’s a balanced meal and it’s DANG GOOD! especially if you’re into the #yolkporn 😜 i eat this every single day because it’s easy to switch it up but keep it simple (and fit my macros depending on my day). jasmine rice is always my base (it’s the superior rice, don’t @ me), then choose your protein (i love steak or ground beef, ground turkey if dieting), add edamame for a little extra protein and soy sauce for the asian kick, choose a veggie (shrooms have been my fave for months), and of course the whole egg as a topper if you need some more fats. 😛

as long as i have rice cooked up, this literally takes less than 5 mins from fridge to microwave to ma mouth. try it out & lmk what ya think! PS i eat this in a big container because it pisses me off when my food flies out of a tiny bowl lmao. HAPPY WEDNESDAY!

Good Morning Friends! What yummy breakfast did you make for yourself today?! One of my favorite "easy" breakfasts to make is simply granola, fruit & almond milk (or yogurt). I have to be careful with how much dairy I have in my diet so most of the time I opt for Almond Milk instead. Another tip is to find a granola that is high in protein, like the one I use by @julianbakery called Pro Granola. It has 12g of protein...BONUS! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

The best way to cook with aubergine? We think it's in Lamb Moussaka. Try this recipe for the family and let us know how it came out!
RECIPE
Ingredients
950 g lean lamb, minced
3 large aubergines
150ml extra virgin olive oil
1 large red onion, finely chopped
3 cloves garlic, peeled but left whole and only lightly smashed
500 ml white wine
1 x 400 g tin diced tomatoes
1 x 5 cm piece cinnamon stick
4 black cardamom pods
1 handful fresh oregano leaves, chopped
Sea salt and freshly ground black pepper
Topping: 75 g butter
75 g plain flour
600 ml full cream milk
200 g parmesan cheese, finely grated
2 medium free-range eggs, beaten
Method 70 mins
Preheat the oven at 200 C.
Heat a small amount of olive oil in a pan and fry the onions until they are soft and golden and remove from the pan.
In the same pan, add the minced lamb and fry on high until the meat is brown and loose.

Make sure that there are no lumps, add a drop of oil if you really need to, but try to do this on the pan without the oil because lamb is quite fatty.
Add the wine, the garlic cloves, the tomatoes, the cinnamon and the oregano and simmer gently for 30-40 minutes.
Cut the stalks off the aubergines and cut them lengthways into ½ cm thick slices.

Heat up the oil in a large saucepan until it’s hot, add a splash of olive oil and fry the aubergine slices quickly until they are just soft and lightly coloured on each side.

Lift them out with tongs and start to layer over the base of a large (about 2,5 litre) ovenproof dish and season to taste with salt and pepper.
Continue layering until all the aubergines are used up, adding more oil to fry should this be necessary.
To make the topping, melt the butter in a non-stick pan, add the flour and cook over a medium heat for a minute or so to cook the flour.

Gradually whisk in the milk and bring to the boil, stirring swiftly (as you would any white sauce) and leave to simmer very gently until it is thick, whisking more often that not.
Stir in the cheese and check and correct the seasoning to taste, allow the sauce to cool and beat in the eggs.
Remove the cinnamon stick and black cardamom pods from the lamb sauce, season
