Tortilla Soup that literally warmed our souls last night.
I've been cooking a lot, even though I haven't posted about everything I've cooked. Keeping my thoughts and recipes in my journal instead of on the computer and blog is making me focus on cooking delicious food and on learning new things instead of getting caught up in the sharing and photo part. It's brought more joy back to the kitchen for me, so that I can be a better recipe-giver to you
Recipe for a big batch of Tortilla Soup:
Olive oil, for sauteeing
2 small red onions (or 1 large), chopped
1 green bell pepper, chopped
2 tbsp chopped garlic, finely chopped (about 6 cloves)
2, 32-ounce containers of organic veggie broth
1, 28 ounce can crushed tomatoes
1 stalk celery, chopped
1/2 cup frozen corn (optional)
1 Tbsp ground cumin, divided
1 1/2 Tbsp chili powder, divided
1 tsp onion powder
1 package of @noevilfoods shredded chicken AKA Comrade Cluck 'No Chicken' Shredded Strips (optional)
6 corn tortillas shells, cut into strips (some reserved for frying and topping)
handful of chopped cilantro
1 1/2 tsp crushed red pepper flakes
salt to taste
Toppings: fried tortilla strips, chopped cilantro, avocado, shredded jack cheese, a squeeze of lime juice, chopped green onions
In a large saute pan, heat a few tablespoons of olive oil and cook the onions on medium heat, stirring occasionally, until soft. Add in the garlic, and cook for about 2-3 more minutes, making sure not to burn. Add the bell pepper for 3-4 more minutes.Season with a little salt.
Transfer the veggies to the crockpot along with the veggie broth, tomato sauce, celery, corn (if using), half the cumin, 1 Tbsp of the chili powder.
In the same sauce pan, on high heat, heat enough olive oil to coat the pan. Toss the shredded chicken (if using) and the tortillas strips with the remainder of the cumin, chili powder, and the onion powder. Cook in the saucepan to crisp, then transfer to the pot with the rest of the ingredients. Add in the chopped cilantro, red pepper flakes, and salt to taste.
