Lunch pt 2
This is something I made Sunday night. I guess you could call it a stew. I had a bunch of stuff around the kitchen that I wanted to use and didn't really know what to do with, but I remembered a recipe I'd seen in my #forksoverknivescookbook and it inspired this! I've got vegetable broth, brown rice, pinto beans, green beans, corn, carrots, tomatoes, peas, garlic, and onion. The pinto beans and rice do put a lot of carbs into this, but they are healthy carbs and a much better decision that any processed foods. I eat a reasonable portion with greens or in today's case, cucumbers. For something I threw together in the crockpot, this is damn good.
