Recipe: 100 g gluten free oats. 15 g chia seeds. 1 cup water. 0.5 cup plant milk. 0.5 tsp cinnamon.
Put the oats, chia seeds and cinnamon together with the water and plant milk in a pot and let it simmer until it reaches the consistency you like - it normally takes around 10-15 min until it is creamy

My sweet friend made vegan Loaded Potato Skins from the Forks Over Knives cookbook! This was absolutely delicious & quite satisfying. The filling was made of mashed potato, splash of almond milk, garbanzo beans, sun-dried tomatoes, onion, garlic, and seasonings. The topping was tahini + lime juice & chives. I added a little ketchup. Approximately 534 calories.

Honestly this is the BEST smoothie I've ever had.
It's my version of the #chunkymonkeysmoothie from the #forksoverknivescookbook (p. 40)
I make it with #bananas #almondmilk #pb2 rather than peanut butter and #cocoapowder . I also add a splash of vanilla extract to bring out the cocoa flavor. The book calls for medjool dates but honestly, this smoothie is PLENTY sweet without them. It's so simple, comes together so fast and is say you could easily turn this into I've cream as well. Despite what some people think, you really don't have to sacrifice #flavor or live off of #kale on a #plantbasedwholefoodsdiet

Lunch pt 2
This is something I made Sunday night. I guess you could call it a stew. I had a bunch of stuff around the kitchen that I wanted to use and didn't really know what to do with, but I remembered a recipe I'd seen in my #forksoverknivescookbook and it inspired this! I've got vegetable broth, brown rice, pinto beans, green beans, corn, carrots, tomatoes, peas, garlic, and onion. The pinto beans and rice do put a lot of carbs into this, but they are healthy carbs and a much better decision that any processed foods. I eat a reasonable portion with greens or in today's case, cucumbers. For something I threw together in the crockpot, this is damn good.

I used a recipe from my #ForksOverKnives cookbook to make today's Breakfast Scramble (p. 54). I like this recipe because I'm not a fan of tofu and this uses cauliflower instead! The yellowish color comes from the turmeric, cayenne pepper, soy sauce (I used coconut aminos instead) and nutritional yeast. 💛☀️😍☀️💛

Local eggplant + free afternoon = @forksoverknives moussaka! 🍆😋❤️😍👅 The stuff takes well over an hour to put together and bake, but it's so worth it! Lentils stand in for the meat in traditional moussaka, and the top layer is made with cashews, tahini, nutritional yeast, onions, peppers & spices.

I made a curried quinoa, potato & greens pilaf with raisins to go with it. Silly idea on a day where the humidity makes it feel almost 100F outside? Probably. But SO tasty!

•2 15 oz cans of chickpeas drained + rinsed (organic and bpa free if you can)
•1 small red onion, peeled + diced
•2 cloves of garlic, peeled + minced
•4 limes, juiced
•1 jalapeño pepper, minced (remove seeds for less heat)
•1 avocado, pitted, peeled + chopped
Salt to taste
