This gloomy Vancouver weather called for soup. I was in Chinatown today and couldn't resist picking up some char sui (BBQ pork), so this dinner was a no brainer. The ultimate comfort food in our house is soup and the versatility of ramen is like no other. The build your own quality leaves everyone satisfied. If you're vegetarian, leave out the meat, if you're vegan, also leave out the egg. Add whatever you like to the rich miso broth and top with anything your heart desires. Raw julienned carrots are a wonderful addition but because I was serving this to our daughter I chopped them small and added them to the stock. A spoonful of corn on top is also a great addition. It really is all about what you like and have on hand (my kind of dinner). ____________________________________________________
